Colour: Sunlit chardonnay
Given time, the nose eventually delivered waxy furniture polish, honeyed oak, tons of vanilla, carrot cake, Crunchie bars and peanut brittle. The palate was lively and packed with flavours of honey fudge, cherry Bakewell tart, Toblerone and zesty orange; salty spices gave weight to the finish. The reduced nose had dark chocolate and cherry (Mon Cheri) with forest fruits yoghurt and Cherry Garcia ice-cream. On the reduced palate, Christmassy spices from the oak and the pleasant numbing tingle of menthol and cloves jostled with cherry liqueur and cassis sweetness. The distillery was converted from a brewery by installing gin stills.
