    Tasting Notes by Adelphi;

    1 of only 263 bottles from cask no. 981Mid gold, with khaki lights and a fine, moderate bead. A slight nose prickle with chocolate malt and hessian, when nosed on warm hands. At first in the glass, the aroma is of chocolate boxes (possibly cherry liqueur chocs) later some fondant and dry peat. A very pleasant texture with a sweet initial taste, drying with sackcloth and ashes in the aftertaste. Water continues chocolates, fondant and ashes, with maritime under-notes on the nose. The texture is soft, the taste lightly sweet to start, with some salt and a whisper of peat in the warming finish.

    It's usual for flavours in the nose to appear & dissapear depending on what was smellt before, but this one seems extreme as it can show quite different characteristics.
    • Nose
      cereal, dusty/chalky vanilla with a mineral touch, hessian, distant dark chocolate / couverture, sweet malt (turns sweeter over the first minutes), few plant notes (fresh corn cob ?!) that seem to turn into fruit & contribute to the sweetness later (green apples & red apple peel). (84)
      Dusty/chalkyness gets less & turns towards wood, fruits come to the fore, quite fresh even, now also some black tea with lemon, butter-caramel, charred wood/smoke, [red] leather (86)

      Strange: nose falls & rises, depending on what was smelt before. After Longmorn 1991 Adelphi, this seems chalky, dry, leathery & even shows some sulphur-y notes (78). After Dailuaine from the same Adelphi batch, this feels more fruity, slightly overripe even, butterfudge-caramel, leathery, full. (86)
    • Taste
      surprisingly chocolat-y in the beginning, some short woody bitterness, then hessian & sweet malt, (86)
    • Finish
      salt, hessian, smoke, licorice, red apples, a touch of couverture/fondant again, also a funny but not unpleasant austere (dried fish) note, very pleasant alcohol warmth & oilyness, but flavours seem to have a hard time poking through the strong alcohol if not given time (84). Later (+60 mins): (87)

    "An Adelphi bottling of single cask 13 year old Highland Park, bottled in

    2011. It was distilled in 1997, a couple of years before they

    transferred into the hands of the current owners."
