A lot fits together here for me. Everything harmonises very well, even a little better than with the PX single cask. I like it and it tastes good...
    • Nose
      88 88
Nice soft nose, rather dark fruity like red berries, raisins, plums, plus cocoa powder and some leather, accompanied by a subtle note of sulphur. Some BBQ in the style of a meat marinade provides variety. Sounds a bit strange….
In the background caramel, wild berry jam. Very fine.
    • Taste
      89 89
The good one is really strong...Tingly hot, spicy and fruity. Lots of dried fruit with a nice sweetness. There is also tobacco, nuts, something reminiscent of dry red wine.
For me, the sweetness comes from dark chocolate and malt. A few spices like cinnamon and marzipan, tastes very pleasant together with the fruit.
    • Finish
      87 87
Medium-length finish, some fruit is still left, plums, cherries, slightly spicy, coffee, roasted aromas, roasted almonds, cocoa,

Delicious..... Can´t find any sulfur notes in my glass.

In the following I describe my impressions after the first tasting of this single cask bottling from Dingle. [02/12/2023; no water addition]

    Also a personal comment/opinion:
A sulfur note is definitely present in this single cask bottling. For me, sulfur in Whisk(e)y is a clear miss - regardless of what others, especially bottlers, say. Since the sulfur notes in this whisky combine with other aromas, I give it a score of over 70 at all. How you can fill something like this as a single cask is really a mystery to me!
    • Nose
      74 74
In the first place, a slight, but clear, sulfur note can be heard. This combines with impressions of the port wine barrel to hazelnut impressions. There are hints of strawberry jam. Heather joins them. Unfortunately, the sulfur keeps reappearing.
    • Taste
      74 74
Here, too, the aforementioned sulfur note appears first. Here, too, the sulfur gradually tends towards hazelnut aromas; light malt; strawberries; heather and dried herbs. Sulfur appears again.
    • Finish
      70 70
medium length / Slight bitter notes; Dark chocolate and notes of sulfur again, which are becoming a bit more subtle.

Dingle and Port Casks just go really well together. As the six batches of Dingle Single Malt since 2016 have shown, the involvement of sweet wine casks is only beneficial to the aging of Dingle's very special distillate.
It's understandable that Dingle, as a (still) very small distillery, calls for prices beyond good and evil for such a single cask, but it would be nicer otherwise. An expansion of the distillery is in the pipeline, let's see where the journey (also in terms of price) will go.

A freshly peeled tangerine, strawberry jam, raspberries - restrained and yet very easy to identify. No in-the-face nose, but discreet and focused appearance. Grated almonds, hazelnut slivers, marzipan, toffee, caramel, milk coffee. The sweet, almost sweet initial aroma of the Dingle New Makes was perfectly captured, not tamed, but given all the freedom to develop further in the Port Cask according to your own taste.
    • Taste
      87 87
Warming entry, sweet, as one would expect from a port cask aging. Strawberry cream, raspberries, red currants, red apple. Dry wood right from the start, which, however, cannot prevent a certain creamy suppleness on the tongue. Crumbly dark chocolate, spiced plum jam, cinnamon, cane syrup.
    • Finish
      87 87
Medium-length and dry finish with plum jam, grapes, overripe cherries, cinnamon, marzipan and nougat.

After the Kirsch Pedro Ximénez, this one felt slightly disappointing to me.
    • Nose
      87 87
Gentle notes of dark fruits. Sweet cinnamon.
    • Taste
      85 85
Spices. Then some notes of dark fruits. Malty.
    • Finish
      85 85
Rather short. Still spicy. Some woody notes.
