    My first PST that I would describe as a miss - the cask imparts too much of the previous spirit and overwhelms the whisky - almost like a brut cidre.

      Over ripened apples, yoghurt and a splash of farm yard funk at the edges.
    • Taste

      A little rough - the cognac seems to taint the spirit, rather than complement it which is a shame as I normally like Tomatin. Some apple notes, but a slightly bitter tang.
    • Finish

      Medium, but the lingering taste is not particularly wanted.

    Tomatin is a dominant spirit that takes some time to become accessible. That is why the owners often put a layer of finish over it with standard expressions. In this bottling, the finish is on a Cognac Barrique. Not thrilled about it. The barrel influence of the finish is noticeable but doesn't seem to really integrate. It is a "hot whisky", slightly alcoholic, with little variation. Would love to hear again why bottling was done. Difficult to defend.

    Official Notes by the Thompson Bros:

    Nose: Alpen, cooking apples, grape must, fresh barley, freshly baked sourdough, grist,
    Robinson's barley water, unripe pears, soaked oats, vanilla, salt-baked turnip, fresh hay.

    Palate: More Alpen (extra Raisins), barley water, sugared almonds, vanilla buttercream,
    dried pine, custard (British) & fresh wort.

    Finish: Quite sweet; barley water (wort), red grapes & cumin. Drinks very well at 50%ABV
