    Only with this no. 12 Hyde releases its first single pot still Irish whiskey. The nice thing about it: they make use of the regulation in the Technical Files, which allows the use of "other cereals" up to a percentage of 5%, and use Irish oats in addition to malted & unmalted barley, which I think fits in very well reflected in the spicy nose.

      Here I have a spiciness of tarragon, marjoram, chervil and some sage in my nose. Crunchy and dark baked rye bread, vanilla, a touch of lily of the valley. Ginger cookies. Freshly grated apple, warm pear compote. The fruit notes form the background, the spices are permanently above everything.

      A creamy, spicy start with lots of nougat and marzipan. The spice is extremely intense, but not unpleasant: crushed peppercorns, tarragon, marjoram, ginger. vanilla, honey. Werther's Echte and milk coffee join nougat and marzipan.

      The fruits have long since said goodbye, but the spicy notes turn a little extra round with nougat, marzipan and milk chocolate.

    a bit closed at first: give yourself time. The sherry is there but doesn't cover everything; Hyde does some things right.
    The sherry is then easily noticeable in the taste, especially because of the whole range of spices on the tongue.
    Oh - dangerously tasty! The malt gets some things right; maybe too soft for some; but I'm having a lot of fun...
    [86 - 82 = good whiskey -> get (second) bottle? Maybe...] yeah, I'll actually get a second bottle for the price.

      Quite fruity on the nose: apricots, plums, raisins, red apple, berry aromas (strawberries?, wild berries, goes in the direction of red fruit jelly).
      Sherry flavors are present, but not fake. With more time vanilla, caramel, toffee, fudge.
      Slight spiciness and typical spices from the sherry influence (reminds me most of Oloroso); the spices become even more pronounced with more air and push the fruits into the background; but are still there.
    • Taste

      relatively soft to start with; spicy on the tongue; here the sherry comes through stronger. The tongue seems covered by the spices, but fits quite well. Slightly warming in the throat.
      Second sip: very soft again, more fruit perceptible (dark fruits), the sherry comes again; now more sweetness, marzipan, honey, caramel. Dangerously tasty!
    • Finish

      Dark chocolate/dark chocolate (but without bitterness), hazelnut moment (for me the Oloroso comes into play again).
