    Mystery sample received in August to taste.
    Tasted blind on August 10:
    • Nose
      wet tea leaves, nutmeg, sweet leather, coconut, something that reminds me of the sweetness of sherry, red apple, pear peel, nice fruity sweetness, the scents of a forest in autumn.
    • Taste
      P: thick viscous mouthfeel with a somewhat greasy texture, sweet, slightly leather, stone fruit, white pepper, caramel, vanilla, cough syrup
    • Finish
      F: medium long, especially the sweet flavors remain. Clearly also wood influences in the aftertaste. And some spiciness of pepper, nutmeg, and slightly cinnamon.

    • Nose
      Lots of honey, cereal sweetness and pears with spices, vanilla pudding with apricot puree, glucose, rose water, nutmeg and grated ginger.
    • Taste
      On the palate, a fresh fruity mouthfeel with an orchard of sweet syrup notes and stone fruit and light charred oak and white pepper. A delicate cooling note of mint at the back.
    • Finish
      Ripe and sweet fruits with aromatic oak spice.

    Clear notes of alcohol, hay, herbs, light fruit, but it's really hard to get something out of it. Not sure I would even think of whiskey blindly

    Herbs, vanilla, first creamy then perceptible sharpness and somehow a youthful unfinished note

    Bimber is another fledgling distillery launching hyped fledgling whiskeys. In order to be able to offer a slightly older distillate, whiskeys from the Highlands and Speyside have been blended. And since Bimber is based in England and not Scotland, the whole thing is being marketed as a pure malt. In Scotland it would be a blended malt. And they are Scottish whiskeys. They were finished in ex-Bimber casks - i.e. in EX-Bourbon casks in which Bimber then matured.

    • Nose
      There are some herbs, there are grass and hay, some straw, there are some fruits. Overall, the whiskey remains on a tart herbal basis with peach and apricot. There is also vanilla, which does not come from fresh barrels, and oak in the background.
    • Taste
      Some cassis on the palate with warm straw and freshly mown grass, plus vanilla and caramel, herb candy and malt.
    • Finish
      The malty herbal candy remains.

      Actually you don't really need it. I don't know if the finish in ex-Bimber is such a hit...

    Nose: American apple cider, white grape, mangosteen, white currant
    Palate: very light, damson jam
    Finish: icing sugar

    Nose: almond blossom
    Palate: white fleshed peach and nectarines
    Finish: simple syrup

    Excellent value dram, especially in 2022.

      Initially a subdued nose with hints of vanilla. With time brown and caramelised sugar is revealed with a hint of red wine gums and fortified wine such as Madeira without the dried fruit notes.

      First thing that hits you is an excellent mouthfeel. It is like drinking olive oil. Then a wave of cooked pears.
    • Finish

      Long with canned pears in syrup and apple sauce.

    A decent blend although the price is a tad much. Reminds me a bit of nipples on a bloke - can't really see the point. I understand that it is a micro-distillery, but sticking a scotch blend in ex Bimber barrels does make it a Bimber product.

      Leather slippers, nutmeg, fruits.
    • Taste
      Well balanced, some fruit notes with a hint of pepper and spice around the edges.
    • Finish
      Medium finish - the pepper note lingers nicely.

    An interesting proposition from Bimber Distillery, the Apogee XII Pure Malt Whisky delivers in terms of deliciousness.
    • Nose
      Stewed apples sprinkled with cinnamon and accompanied by apricots, melon and sweet oranges. Some light floral touches (lavender and geranium) as well as Love Hearts and a subtle toffee-esque quality.
    • Taste
      Viscous mouthfeel with a touch of dry oak, oranges and some milk chocolate, as well as peaches and honey. A sliver of mint in the background.
    • Finish
      Lingering sweetness and some white pepper. Medium in length.

    Still looking for a sample of this new dram.

    One thing bothers me though. Bimber distillery was founded in 2016 and the first Bimber whisky's were bottled in 2019. It is said that this new blend has matured in ex Bimber casks, albeit such casks were only available after 2019. Timewise this does not add up. I bet this is rather a finish than a 12-year maturation in ex Bimber cask. The duration of the finish is however not disclosed.

    A very pleasant blended malt and I think it’s a real crowd-pleaser. It has nice fruit notes, some spice and everything is nicely balanced. This is well made.
    • Nose
      Lovely nose, quite fruity and some lovely fresh notes too. A lovely mixture of oranges and lemons. Honey. Salted caramel. Then plenty of red apples, pears and a light floral note. Followed by ginger and cinnamon.
    • Taste
      Oranges, but also pineapple in the background. Red apples again. Milk chocolate and toffee, followed by a faint hint of oak. It’s a little bit spicy, with notes of cinnamon and a touch of black pepper.
    • Finish
      Mid-long with coffee, milk chocolate and some spices.

    Apogee XII whisky offers flawless balance with additional layers of flavour and complexity derived from the vivid, fruit and spice-forward character of the ex-Bimber casks.

    We sourced some of the finest single malt whiskies from both the Highlands and Speyside. These whiskies were matured for a minimum of 12 years before being enhanced further through skilful, meticulous blending and an additional maturation in ex-bourbon casks that were previously used to age Bimber’s award-winning London single malt whisky.

    Bottled at 46.3% ABV with no colouring or chill-filtration, Apogee is presented in a striking, custom glass bottle – which features a tactile, hammered glass that has been fashioned to imitate the surfaces of Bimber’s small copper pot stills.
    • Nose
      Spiced pears and oven-baked apricot flans are sweetened by candy necklaces and scented with rosewater, nutmeg and powdered ginger
    • Taste
      Syrupy orchard and stone fruits provide a bright and fresh mouthfeel supported by lightly charred oak, gentle white pepper and cooling mint
    • Finish
      Lingering ripe and sweet fruits alongside sympathetic, aromatic oak
