The nose wove together different strands; a warp of fruit (grapefruit, pineapple, mandarin, cherry, bubble-gum) and a weft of vanilla, coffee, chocolate, marzipan and nutty fudge - an intriguing fabric stretched on an oak loom. The reduced nose, turning more tropical, transported us to various exotic market locations (Funchal, Trinidad, Port of Leith?). The unreduced palate, pleasantly fizzy, reminded one panellist of passion-fruit mojito; others got fudge, coffee, iced biscuits and raspberry jam. The rum impressions increased with water; pineapple, coconut and lime - `Sunny, tropical and nice`. The distillery recently increased the number of stills, but not apparently, the `sixteen men`.
