The nose suggested a boutique New World bookshop; incense and vintage jewellery with a hint of must. We identified Montilla sherry, green ginger wine and Sauternes with honey and grape must; Lyle’s tinned syrup and lemon curd. The unreduced palate was luscious and syrupy: grapes and apple skins coated in golden syrup; lemon bonbons and Crabbie’s green ginger wine, salted honeycomb. Water brought out more honey and ginger on the nose, with base notes of elderflower and marijuana leaf. The reduced palate revealed a Thai curry with lemongrass and ginger followed by a syrup sponge pudding for dessert. The distillery has an Oyster Catcher as its symbol, a bird that is an annual visitor to this distillery near the fishing villages of Buckie and Cullen.
