    nose:
    on dried sherry fruits, peppery spices, well-emphasized wood, fine toasted back
    mouth:
    it goes on sherry with black fruits, on grapes, dates, the moldy borderline that protects it, the typical rianço in fact
    woody heaviness with chips, the toasted side continues on cold ash from an extinguished fire
    final:
    woody, spicy, ashy and releasing moldy sherry scents, more than mad.

    Slightly mushroomy, cloudy and peaty nose at the beginning. Then comes the classic and sweet sherry. Some dust and alcohol. After 20 minutes of breathing, the aromas of a spoiled (or very old) sherry cask are clearly audible. But this aroma does not spoil the general feeling, it is somehow pleasant .... After an hour of breathing, there is a persistent locomotive smoke from coal in the nose. Although the barrel is refueling, it seems to be quite active. The taste of burnt wood and rather sweet smoked dried fruits. Slightly alcoholic. The aftertaste is medium, oak-tannin. No sherry acid. I would say more burnt crust of rye bread...

    Even though it’s from a refill cask the sherry speaks loudly here, with the peat being present but taking a back seat. The nose is classic sherry on dried fruits, figs, and woody notes. Very soft peat in the background.

    The palate is wonderfully sherried, with the balance being spot on. The sherry and peat are dancing but not fighting. On the palate the peat is more distant, the cask being very dominant. On the finish, the peat notes reasserts itself to remind you that this was an Ardmore.
