    It didn't take long for Ballykeefe to get from the opening of the distillery (2016) to the start of production (August 2017) and ultimately to its first own whiskey. Still young in years, it already shows pretty well the direction in which it will develop: even the young brand has many components of a really good single pot still whiskey.
    • Nose

      Makes a fresh, fruity and malty impression at the beginning. Freshly grated ginger adds a sweetish-tart spiciness to the nose. Green apple, gooseberry and kiwi provide a fresh and green fruitiness, twigs freshly freed from the bark underline this feeling a little. Over time, the green impression fades into the background, followed by honey and vanilla, caramel and toffee. In addition to the ginger, savory and tarragon are now used as seasoning.

      Dry and spicy start, in which the nose continues in mirror image. Here, too, green apples, gooseberries and kiwi provide a pleasant fruit sweetness, on the tongue it even appears less “green” than on the nose. Grain notes, malt, fresh hay. But the pot still spices are more pronounced from the start: chervil, marjoram, tarragon and savory form a nice counterbalance to the fruit notes. A little milk chocolate and toffee.

      As with single pot still Irish whiskeys, the spices stay on the tongue for a long time and linger for a long time. A little green apple and toffee, plus dry wood and dry deciduous forest floor.
