    It's just a little too spicy and (seemingly) immature at times for a higher rating. I can't wait to try this at a more advanced age. But I guess I will have too.
    • Nose
      Sort of a floral fruit basket too, if that makes sense. There's apricots, underripe pineapple and lemon. It also has this green, agave-like element that I noticed in an early cask sample too. Finally a whiff of honey and draff, but the grain isn't as pronounced as other Waterford I've tried.
    • Taste
      There's this very faint ashiness at first, but also plenty of spices such as white pepper and cloves, followed by honeycomb, agave and Williams pears.
    • Finish
      Slightly dry with plenty of spices and lingering orchard fruits.

    You have to ventilate a lot because it is very new make spirit like at the beginning, then it opens up.

    Unripe, sour, tastes more like a grappa. Thin on the finish.

    A palate flatterer, velvety and creamy. The overall picture is round and I find it simply delicious. I'm slowly becoming a Waterford "fanboy", I find it remarkable how smooth a three-year-old whiskey can be. Another example for me that age does not have to be a quality criterion.

      Semolina porridge, cereals, white wine, punch, wilted and musty sweet flowers, large cut flowers, sweet pastries, crumbled dough and very creamy and soft!
    • Taste
      It goes on smooth and soft. Muesli, fruit, wine cream, white wine and men's cream.
    • Finish
      Oily and creamy, pastry punch, honey, quince jelly and wine jelly, vanilla.

    Since Waterford has been on the market, I've always had a bottle open, Single Farm or Cuvée. Now I had a few weeks break, but already the first dram gave me that great Waterford feeling again, which is even more intense with this Luna 1.1 than is the case with the Single Farm Origin bottlings. The path seems clear when a whiskey that is just three years, two months and a day old is of such quality.
    There's quite a bit (too much) gibberish in the distillery video for this bottling in my opinion and think what you will of Mr. Reynier, but gentlemen, there's no doubt that they make really good whiskey.

      A very creamy and dense nose, milder and rounder than some Single Farm Origin bottlings. Crumbly and loamy earth, salty air, nougat, toffee, caramel and malt, very well balanced. Apricots and fresh figs, raisins, cherry jam. In waves a wind that blows over a meadow with wild herbs. Fresh bread dough, rising marjoram and tarragon.

      As on the nose, the feel on the palate is creamy, soft, velvety and incredibly dense. All available aromas seem to hit the tongue at once, so that nougat, toffee, malt, caramel, salty fruit drops, apricots, raisins and marzipan come together. No immature notes whatsoever, which is absolutely amazing given its age. Toffee and nougat are literally on the tongue, while the (sometimes salty) fruity notes keep coming up again and again.

      Sweet and creamy and, yes, medium-length on the finish. Believe it or not. Maritime notes, but at the same time earthy and loamy and with lots of dark chocolate and nougat.

    We finish tonight’s tasting with the world’s first biodynamic whiskey. Waterford beat Bruichladdich’s biodynamic release by just two months, though Bruichladdich’s is a 10yo [WB].
    Waterford’s Luna adds a further 9 hours to Gala’s already impressive fermentation time – 190 hours in total.

    N: Such honey, and at this slender age?! Furthermore, it’s a little greasy,… and bourbon-y but in check.

    T: More honey into cocoa, again, with similar pongy funk seen in the Cuvee. 

    F: The oak’s influence itself I noted as ‘powerhouse’, the virgin wood bringing a neutral if spicy zing.

    C: On the one hand, there’s less going on here than the organic barley release. On the other hand, here, we’ve a less obtrusive cask programme that could have masked the painstakingly-grown biodynamic barley spirit.

    Very good for a 3 year old whiskey. You can taste that this is relatively young, but there is still a lot to do. Needs run to fully open.

    This must be the seventh Waterford release I try.

    N : once again, a variation on the barley theme. Rawer than The Cuvée. Peppery, barley sugar, menthol and raw fruits (apricots, acidic like a green apple or perhaps pineapple). A little alcohol tingling here and there sadly. Very reminiscent of labneh too. Thijs100 noticed an agave-like note, and I have to say it's reminiscent of some of the softer mezcals I had. Just like The Cuvée, it develops with time on biscuits, chocolate and citrus, while remaining on the wild side.
    M : oh yes, mouthcoating once again. I'm an absolute fan of the mouthfeel there, the most impressive (and I've been impressed) I had from Waterford. Less on the dough and yoghourt than the nose, more floral-forward. Barley sugar, biscuits, bitter orange. Great first impression. A bit on the bitter side, a little hot too sometimes (chili), still simple but more variations than The Cuvée. Lot of salinity.
    F : medium, still on barley. Christmas cake feeling in the end, still lightly bitter : cinnamon, orange peels, nuts. Roasted coffee beans too.

    To me this is the best Waterford release (out of the Micro-Cuvée though). It should appeal to lovers of raw products : white mezcals, rhums and clairins, natural wines etc. It's raw, has some flaws, but very generous. 7/10

    Edit : tried again 4 months later, and boy I hope there will be some older versions soon.

    Much too young. PLV does not fit. Here, more emphasis was placed on bottle design (glass cork) and presentation than on the content.
