    Dark as you like, this is almost opaque in the bottle, but as most Edradours do, the spirit character somehow still manages to come through that heavy cask influence. The sweet treacle-like character of this dram makes me think that this was probably filled into a PX cask though I may be wrong. Value (£85) : 8/10
    • Nose
      Huge aromas on the nose. Rich soaked rum raisins and dark chocolate. Thick, meaty sherry influence with braised beef and unsmoked ham. A yeasty note like you get from bread dough. Some rich treacle and caramel sweetness. Burnt sugars. The alcohol is present with some varnish like notes but not overpowering in any sense. Notes of juicy plum, dried figs, dates and maraschino cherries. Some cracked black pepper and a touch of sulphur (but I think that just adds to the overall character of the spirit).
    • Taste
      On the palate, more spice and oak comes through. Wood tannins and a prickle of chilli spice. The mouthfeel is oily and velvety. Dominated by very dark 90% chocolate and roast espresso notes. It's not as immediately sweet as the nose initially suggested though still has some of that rich treacle character. Over time some Muscovado sugar and Manuka honey come through. Full of dark fruits like plums, figs and raisins. A light touch of struck matches. More black pepper, some aniseed and cinnamon. That meaty character comes through again, full of umami along with some deep roasted peanuts. Right at the end flavours of oak spice and tannins start seeping through.
    • Finish
      Bitter, slightly sweet and very long. That oak spice and tannin influence continues here and is quite dominant at first. Rich dark chocolate coats the mouth. Some heat comes through, more ginger like now. Burnt caramel and peanuts return. That yeasty note returns here on the finish as well along with some of those raisins. I'm also getting some minty liquorice candies.

    I usually like these sherry crackers, especially from Edradour. But this doesn't really taste like whisky, it tastes more like a whisky liqueur. It's too sweet on the palate too. And I don't notice anything of wood.
