    here we go again 91.25?

    the same formula like the other 3 I've tasted
    great nose , sour and boring taste and finish
    • Nose
      it starts of very strong and peppery there is alot of alcohol burn but it calms down quite fast and opens up with a lovely
      mix between citrus and cinnamon , some star anise and ginger , ginger bread and black pepper , caramel , honey and a touch of maple syrup
    • Taste
      like the previous 3 great nose but disappointing flavour , sour red fruit notes lots of red currant and cranberry's , oaky , caramel , honey , lots of black pepper

      short to medium finish
      pepper , sour red fruit explosion , honey , oak , caramel and a hint of maple syrup

    A few weeks ago I tried my first dram from this young Belgian distillery I Bruges: a one year old spirit named Rogia, finished on an ice wine cask and bottled at 59.2%. This one ups the ante, being a 2 years old, Ryggia, at a whopping 62.1%. I confess: expectations are high. By the way, just like Rogia, Ryggia also means ‘holy water’ and historians agree that this evolved into Bryggia, the old name for Bruges.
    Powerful and pleasantly sweet nose on raisins, caramel, cardamom, cherry candy, candied orange peel with a sugar coating, chocolate shavings and ferns. Nice oaky edge that does not dominate at all. This is very promising.
    That it offers a kick to the teeth at first sip will come as no surprise. The salive glands are put to the test. But once the fire has been put out, I am pleasantly surprised with notes of stone fruit, bitter oranges, apple sauce, cloves, nutmeg and black pepper. It sure warms the mouth, but if approached with respect water is not necessary.
    Long, warm and pleasant finish that remains both spicy and perfectly balanced.
    Respect. I think Thibaut is going to conjure up some lovely products from his stills. Admittedly, 78 EUR for a half liter is not cheap, but it certainly is tasty!
