  1. Official tasting note

The Spirit of the Underground Collection, is an ongoing collection of single malts, that celebrate the heritage and diversity of the distillery’s home city, with each bottle featuring a different station on the London Underground network.

Each release features stunning iconography presenting a unique piece of London’s history, and comes adorned with an eye-catching label and packaging design that observes the significance of each station’s location.

The four initial releases of the collection; Waterloo (58.3% ABV), Baker Street (58.1% ABV), Kings Cross St Pancras (58.5% ABV) and Oxford Circus (58.8% ABV), have all been matured in American Oak ex-bourbon cask.

With 270 stations on the network to select from, The Spirit of the Underground Collection is intended to grow alongside Bimber. New expressions will be added in batches (four single casks at a time) populating each of the Underground’s 11 lines and reflecting the vibrancy and multiplicity of the stations and locations throughout the capital city.

Commenting on the launch, Matt McKay from Bimber, said: “We’re delighted to unveil this exciting new partnership and the first expressions of The Spirit of the Underground Collection. As we approach the fifth anniversary of our spirit, this collaboration with Transport for London celebrates both one of the great engineering projects of the past 200 years and the ongoing development of our spirit. Bimber is very much a product of London and we’re thrilled to showcase our single malt whisky in this most incredible way.”

Limited to around 250 bottles per release, the first batch of The Spirit of the Underground Collection whiskies, will be available later this month from Bimber’s online shop, for a RRP of £125.00 each.

The white Bordeaux (Graves) wine I bought a case of two weeks ago! White Bordeaux with notes of red and tropical fruits, just fantastic. Flowery notes (don’t ask me which flowers. Okay. Pretty ones.) White pepper, lime, cracked malted barley, scented candles, crème brûlée, lovely. A bit of coconut water. All hail the King. A few drops of water tone down slightly the white wine notes in favour of citrus.

The mouthfeel’s thickness is in between Waterloo and Baker Street. Spices hit with pepper and ginger, nasturtium again, orange peel, but this is mostly spices here, making it a bit challenging. No, that’s not a tear at the corner of my eye. Afterwards, a citrusy fruitiness appears. Water brings pear and peaches I didn’t get before and a chocolatey oakiness, like liking a stave with melted chocolate on it, while quieting down a bit the spices.
    • Finish
      86 86
Oak bitterness, spices and lemon juice.

A cracking dram - the alcohol adds to the flavour rather than overwhelming it, amazing complexity for such a youthful dram. Main drawback is the silly price were you to try and nab a bottle now.
    • Nose
      85 85
Green apples, wax polish, concentrate of apples.
    • Taste
      86 86
A really nice balance of apples and fruit, some spice notes, slight sweetness with a decent heat at the sides.
    • Finish
      86 86
It keeps developing long after being swallowed - more dark fruit notes and spice.

    • Nose
Oak from a good cask, with fruity spirit. Red apple tart, sprinkled with brown sugar and baked. Vanilla pods, light nutmeg and star anise.
    • Taste
Medium mouthfeel. Mixed orchard, red fruit, and oranges. A slight buttery pastry note alongside. Again, quality oak, wood spice and vanilla. Pepper, and some chilli heat.
    • Finish
Medium to long finish. Milk chocolate with chilli. Warming, with further spice.
