      Orchard fruits on which you’d pour a bit of lemon juice to prevent oxidization. Slight touch of red wine, cough sweets, a bag of Werther’s original caramel, pecan pie, vanilla ice cream with macadamia nuts. Langues de Chat biscuits. With water, it’s even more fruity but with some ever so slight herbaceous fresh notes of eucalyptus and the just menthol notes of menthol cigarettes.

      Sweet and slightly spicy arrival, thick and a bit drying mouthfeel. After a moment spices (pepper, ginger) get more present. Milk chocolate, a coffee spoon of … coffee, roasted almonds and caramel. Water makes it sweeter at first and spicier afterwards. It’s everything like neat but cranked up a notch too.

      Medium oakiness, apple juice, a bit shorter than the other stations. Still a good chocolate hit after a while.

    It's a beast of a spirit for something so young and unlike most of the Bimber's I've tried. If I were to use a single word I'd say "proper".

      If you nosed this blind you would swear it was a sherry cask, quite dry - almost like a vermouth.
    • Taste

      The alcohol on this lacks the normal refinement of a bimber - it's a beast, but as it settles down there are some fruity notes. Not particularly sweet, like an old grain.

      The aftertaste is a numbness t first, but once your sensation returns there is a pleasant herbal note.

    Thick Vanilla Custard inside just-baked donuts, Vanilla Pastries, Apricots, Thickest mouthfeel out of Baker Street, Waterloo and Oxford Circus. Oily, Sweet.

    The Spirit of the Underground Collection, is an ongoing collection of single malts, that celebrate the heritage and diversity of the distillery’s home city, with each bottle featuring a different station on the London Underground network.

    Each release features stunning iconography presenting a unique piece of London’s history, and comes adorned with an eye-catching label and packaging design that observes the significance of each station’s location.

    The four initial releases of the collection; Waterloo (58.3% ABV), Baker Street (58.1% ABV), Kings Cross St Pancras (58.5% ABV) and Oxford Circus (58.8% ABV), have all been matured in American Oak ex-bourbon cask.

    With 270 stations on the network to select from, The Spirit of the Underground Collection is intended to grow alongside Bimber. New expressions will be added in batches (four single casks at a time) populating each of the Underground’s 11 lines and reflecting the vibrancy and multiplicity of the stations and locations throughout the capital city.

    Commenting on the launch, Matt McKay from Bimber, said: “We’re delighted to unveil this exciting new partnership and the first expressions of The Spirit of the Underground Collection. As we approach the fifth anniversary of our spirit, this collaboration with Transport for London celebrates both one of the great engineering projects of the past 200 years and the ongoing development of our spirit. Bimber is very much a product of London and we’re thrilled to showcase our single malt whisky in this most incredible way.”

    Limited to around 250 bottles per release, the first batch of The Spirit of the Underground Collection whiskies, will be available later this month from Bimber’s online shop, for a RRP of £125.00 each.
