The color is strikingly bright, quite unusual for a sherry cask. The aroma is initially very fresh, almost young and sparkling. Only gradually the oak comes out, paired with a little spice. Now add a touch of vanilla, it gets better. No, not sweet, as expected from a sherry, but strong-spicy. I do not smell anything of the sherry, maybe a small raisin. A first sip drives my saliva into my mouth - and violently. Very strong, it has a fruity taste. I notice my dark chocolate, spices, cloves and a little more intense now the vanilla. A good ex-bourbon, who gets more bourbon than sherry.
