    The spicy oak is just a little too dominant on the palate, otherwise the GlenAllachie 12 Years Sauternes Finish is a lovely sweet, fruity single malt.
    • Nose
      Honey and beeswax with juicy white grapes, powdered sugar and cotton candy, as well as caramel-glazed apples and peaches. A hint of chalk in the background.
    • Taste
      Creamy and velvet-y, there's plenty of lovely fruits like pineapple, apricots and whiffs of bitter grapefruit, but also a good amount of nutmeg, musty oak and white pepper.
    • Finish
      Touches of lemon pith, roasted peanuts and spices. Long.

    This 12-year-old GlenAllachie with its finish in Sauternes barrique casks impresses with its beguiling aroma of ripe yellow fruits and a wonderful sweetness. By adding water, this is lost in favour of distinctly spicier and drier notes, so that it can be safely omitted.

    • Nose
      Delightfully sweet and fruity on the nose with beguiling aromas of apricots, grapefruit, ripe yellow grapes and a hint of pineapple. This is joined by notes of vanilla, blossom honey and slightly bitter grape peels. In the background, a touch of white pepper with a hint of cinnamon.
    • Taste
      Sweet and fruity also on the palate with apricot, pineapple, grapefruit and blossom honey. In addition, a slight alcoholic warmth with a discreet peppery note and some spicy oak.
    • Finish
      The finish is long-lasting, creamy and warming with grapefruit, a slight nuttiness, subtle toasted flavours and a touch of almond.

      With water: After adding a few drops of water, noticeably spicier on the nose with pepper and oak notes. In addition, less fruit aromas, some pineapple and creamy honey. Sweet and fruity on the palate with some pineapple and grapefruit. Overall spicier with notes of cinnamon, pepper and almonds. The finish is slightly shorter and noticeably drier with slightly bitter notes of grape seeds, grapefruit and spicy oak.

    In the autumn of last year, I led the masterclass Glenallachie at the Czech Whisky Festival, which took place untraditionally at this time. I provided 5 tasting notes within it and in the end I also allowed myself to evaluate and organize them. Before that, I finally tasted them more than half a year after the tasting. It was a 10 cl sample, so there was more than enough material.

    Undiluted turned out as follows:

    After subsequent dilution with water, the order was slightly changed to:
    1. Glenallachie 30yo (WB176604)
    2. Glenallachie 11yo Grattamacco Wine Finish (WB182506)
    3. Glenallachie 13yo Rioja Wine Finish (WB182508)
    4. Glenallachie 12yo Sauternes Wine Finish (WB182507)
    5. Glenallachie 11yo Port Wood Finish (WB152144)

    It was not my first masterclass Glenallachie and I have tasted more than enough samples from this distillery. With few exceptions, I was not very interested. For this reason, I was very pleasantly surprised by the 11yo Grattamacco Wine Finish, which was simply significantly different from the others. Along with 21yo (WB168872) and 1989 Cask No. 6121 (WB161721) probably the only one from the production of this distillery, for which I could imagine buying the whole bottle.

      Dandelion flower, vanilla pudding, egg yolks, dried pineapple and alcohol.

      After adding water: Linen dough, lemon grass, dried figs, vanilla sugar and butter pastry.
    • Taste
      Very strong alcohol. Sweet and sour, almost aggressive. Slightly prickly and slightly astringent. Flower honey, grass stem, white grape, nectarine, pineapple and lemon peel.

      Creamy, more pleasant and drinkable after adding water. Lemon cream, banana, marzipan, light pepper, menthol candy and unripe plum.
    • Finish
      Slightly waxy. Pins (plum), yellow mirabelle and vanilla pudding.

      After adding water: lemon peel, menthol freshness and beeswax.

    Once again a successful malt from Glenallachie's Wine Series. The Sauternes brings great sweet and fruity notes, but also oak. The oak comes through clearly on the tongue and in the finish. You have to like that. I like the combination a lot.

    • Nose
      The aroma is mainly sweet and fruity with prominent notes of honey, caramel candy and vanilla. There are also figs and dried apricots, as well as slightly sour citrus fruits. The barrel is also noticeable very early on and merges with the citrus note into an association of grapefruit. Nuts and almond biscuits round off the whole thing. After the first sip, the oak becomes stronger on the nose, after a few minutes the sweet fruits then assert themselves again.
    • Taste
      In the mouth, too, it starts with a clear sweetness, which is immediately intercepted by a slightly tart influence of the oak. The honey and the citrus fruits (grapefruit) are back, along with slightly exotic influences of pineapple. After a few seconds, the mouthfeel becomes a little creamier with caramel, almonds and marzipan.
    • Finish
      The oak brings a slight bitterness, which reminds me of bitter almond oil and marzipan balls rolled in bittersweet cocoa powder. I also have to think about milk nut chocolate. The finish is relatively long.

    Took my chance on the Glenallachie 12 Sauternes, thanks to excellent advice at Slijterij Belfort in Sluis, NL. Very pleasant surprise, and was able to really distinguish notes as a Whisky beginner.

      Very sweet, with floral honey, nougat and juicy peach. Also hints of red apples and caramel. And of course, obvious white wine.

      Strong peppery notes, again with white wine throughout. Not as sweet as the nose, but delightfully smooth. Warming.

      The pepper lingers for a while, and a bit dry.

    The wonderful creaminess of this whisky inspires me. I also like the interplay of sweetness and flavor. Only the bitter tone, which is actually quite subtle, is a little too clear for my sensitive taste in this regard. Otherwise an excellent drop for a fair price.
    • Nose
      Blossom honey and vanilla. Light fruits, apples, apricots and actually the grapefruit from the official Notes. Add some nut chocolate and, as the temperature rises, some Kaba powder.
    • Taste
      The mouthfeel is very, very soft and creamy. Sweet and light bitter notes appear on the tongue at the same time. Nutty aromas and oak spice follow. The blossom honey can also be found again. Ripe peach, dark chocolate and a peppery spiciness are added.
    • Finish
      A creamy layer stays in the mouth for a long time. The sweetness and spiciness linger for a long time, but the bitter undertone also remains.

      Dry white wine, melon, sugary sweetness. apricots and tangerines, light summer fruit. lemon peel. powdered sugar, but not on any pastry, just the sugar.

      Much better than the neck pour i had earlier. I find all Glenallachie bottles need time to open up. Sweet concentrated sugariness that I usualy get from Sauternes cask. Lemon pastries with a hint of butterscotch, apricots again show up but in a dried form, again very concentrated sweetness.

      Drying after the sweetness dissipates. A little bit of hazelnut or a light nuttiness but not super present.

    This GlenAllachie 12 Year Sauternes was all about the citrus. Orange, Lemon, Grapefruit brightness, which was fun, but it left me wondering, “Where’s the Sauternes finish?” It feels like this needs more maturation time with the Sauternes cask (it was less than 2 years), or they just got tired casks. It’s interesting, but my search continues for a real Sauternes cask infusion that stands out.
