    Whiskys that are not cold-filtered are usually bottled at 46% vol. If the alcohol content is higher, the oils and fats remain dissolved in the whisky. Below 46% vol, the result is a very cloudy malt. Signatory Vintage deliberately plays with this effect in the 'Very Cloudy' series.

    An unspectacular Caol Ila from Signatory's Un-Chillfiltered Collection. This time not from unnaturally dark syrup casks, but from two hogsheads that have matured into a beautifully golden, glowing whisky. The Caol Ila is 9 years old and, in contrast to many of the Caol Ilas currently available of the same age, is fairly and appropriately priced. A year after its release, it's still available for €50.
    • Nose
      In the aroma, the beautiful Caol Ila smoke is immediately pleasantly present, does not stand out stinky and has warm ash notes. This is followed by ripe citrus fruits and buttery, creamy notes. Wood aromas are also present. But everything is a bit restrained and not complex - but still interesting and by no means too young or immature. It's a whisky that's more sipping than sniffing.
    • Taste
      The taste of the smoke occupies the tongue, the whisky is pleasant and round, the smoke is present, dry and ashy, no smoke, no cowshed. In contrast to the citrus-heavy original bottling, the whisky is round and warmer. A nice dram.
    • Finish
      There is some wood at the end, but it is not too bitter or old. The hogsheads were of good quality. The aftertaste is not very long and persistent, but invites you to take the next sip.

      A very pleasant Caol Ila that is miles better than the somewhat rough and unbalanced original. A clean and tasty whisky for under €50. Serge Valentin gave him 87 points, which is perhaps a bit of an exaggeration. Although - a nice whisky it is!
