In the first tasting, a brief note of peaches and nectarines, honey and yogurt. Just brief. Then smoke - brine and embers, some seaweed, salt, pine smoke, driftwood fire on the beach. Strong smoke. Salted lemons and apples. The second tasting mostly dispensed with the fruits except limes, and focused on the peat. Hot tarmac, salt, a rocky shore. Salted dried fish.
In both sittings there is a small undercurrent of something tart. In the first sitting, yogurt. In the second, something like fermented limes and fresh sauerkraut. Not funky, just something a bit sour.
With water some torched burnt wood. A touch of wool. Charred pinappples, salted limes.
Smoke and sugared lemons. Piney smoke. In the second tasting more of a raging fire. Malty, oily. With water a bit more tar, some pepper, banana
long, oily smoke. Sweet malt. Peppery and oily. A bit of mango with water and turbinado sugar.
