- It grabbed me and I tore open a bottle from Waterford! A lot of young fruit on the nose, I smell bananas, grains and a lot of fruit acid. The start is strong. The alcohol is still noticeable here, but that was to be expected even at almost 4 years of age. Quite spicy and (fruit) acidic. The whiskey is still not quite balanced but you can't expect that after the time. Medium-long finish. Overall very promising considering how young the whiskey is. I definitely enjoy the whiskey and I get a good first impression of Waterford!

Two miles east of New Ross and the River Barrow, on the Wexford-Kilkenny border, lies An Leacain - The Hillside - the site of the rebel army camp on the eve of the Battle of Ross in 1798. Francis Kehoe has farmed here for four decades, his barley benefitting from well-drained, sloping fields of sandy loam of the famous Clonroche series, particularly good for deep roots.
HEAD DISTILLER'S OBSERVATIONS:
Appearance: Apricot with va va voom! oils.
Nose: Orange, dark chocolate, barley husks, grapefruit, dried berries, hay dust, apricot, fruit shortcake biscuits, buttermilk, rose water.
Taste: Spices, butterscotch, white pepper, orange zest, earthy, trail mix, grapefruit, coco powder, late sweetness.
Finish: A gentle spice that lingers and holds then gets chewy and sweet. "

"This edition was distilled from barley grown by Francis Kehoe and harvested in 2016 in County Wexford.
On his Lacken farm, which has been in the family for 4 generations, Francis can produce barley of exceptional quality thanks to the influence of the sandy and well-drained terroir that makes up his sloping field.
But for this edition, Ned Gahan, the master distiller of Waterford went even further by composing the blend of barrels with the teams of La Maison du Whiskey, in a completely collaborative way and exclusively for France.
Several months of discussions, tastings and adjustments later, we are proud to present this highly complex single malt from the blend of ex-bourbon barrels, American new oak, French oak, of port and marsala.
It is characterized by superb fruity notes on the nose, a greedy, refined and suave palate thanks to flavors of cocoa, white pepper or even nuts and grapefruit.
Profile: Fruity and smooth. Grapefruit, cocoa, apricot.
Nose: Complex and fruity. Orange, dark chocolate, grapefruit, apricot dried berries, straw, barley, fruit cookies, milky and floral notes (rose)
Palate: Spicy and smooth. White pepper, cocoa powder, orange zest and caramel on the attack, followed by gourmet flavors of nuts and grapefruit and an earthy touch.
Overall: Refined and delicious. Beautiful notes of sweet spices complete an enveloping and creamy texture. "
