Collaborating with Adam Spiegel of California’s Sonoma Distilling Company, they have blended their own London Rye® Whiskies aged in a variety of casks, including Virgin French Oak (8-12 months), STR (Shaved, Toasted, Recharred) and ex-Bourbon barrels with Adam’s own unique blend of Sonoma Bourbons. The result is a one-of-a-kind whiskey showcasing the distinctiveness of both distilleries, working together to give drinkers the perfect sip.
Kicking things off with a hit of brandy-soaked cherries, the aromas turn towards earthy notes of peanut butter, chocolate and a slightly tannic tea, all balanced out with sweet, ripe apricots, and finishing with warming spices of cinnamon and allspice. Sweet grassy notes of corn on the palate, fresh grass and honeysuckle lead the palate before rounding out to umami hits of peanut butter and leather.
