    Sauternes influence at its best, after a while in the glass it convinces unconditionally.
    • Nose
      the first impression is sweet, honey, hand cream and I don't mean that negatively, but somehow floral but creamy, rather light smoke, the sweetness definitely sets the tone here, ashy, vanilla and meadow of flowers, the first sip helps the nose to open, creamier, nut, cake filling, you think you can smell the Sauternes, vinous, some malt, slightly dirty, it opens more and more, now also some very dark chocolate (it hardly smells any more), is getting better and better
    • Taste
      very oily, sweet, ganache, vanilla, honey, the smoke hugs, a lot of smoke, slightly floral, always accompanied by the sweetness, slightly nutty, buttercream, a dessert in liquid form, very tasty, I like it sweet and great mouthfeel
    • Finish
      sweet also at the back, ashy, nut, a little apricot, but only hinted at and because I somehow want to assign the slight fruitiness

    Again, a nice oily texture with wonderful windows on the glass. When it comes to nosing, I think the taste and finish are fantastic!

      Oops ... first step on the nose: mussels in sea water. I like mussels, but that surprised me. I've never had it like this before ... and comes back with every new nosing on the glass.

      After that smoke, licorice and the maritime notes are turned to caramel and

      Concise smoke, blackberries and raspberries in a honey coat, sweet cake combined with smoked bacon notes and a little flower meadow in summer.

      Smoky long finish with lingering sweet notes and spice of pepper and I even have some nutmeg. Complex notes stay on the palate for a long time.

    Tasting notes from Jim McEwan:

    Colour - Pure Gold/ Chartreuse

    Body - The spirit is muscular, smokey and intriguingly sensuous. This is the most heavily peated malt in the world yet the sweet notes of the wine calms the giant and gives a flavour & texture that blows your senses into a place never before experienced.

    Nose & Palate Your expectations of a brutal smoke induced monster are shattered. This is the sexiest spirit ever created. The intense smokiness has been seduced by the sophistication of the wine. It should not be possible to calm the beast but it has and the result is absolutely amazing! It opens on a heat haze of peat fires and sweet oak, bog Myrtle, Heather flowers, wild thyme and then the beauty that is the wine emerges with style and grace totally blowing your senses apart. The sweetness of the greatest sweet white wine in the world totally seduces the giant and the result is amazing. The smoke and marine notes pay homage to the cask and it’s a case of spiritual seduction and the beast is transformed into a gentle giant. Now the aromatics and flavours emerge with hints of wild flowers and plants from the peat fields, Heather, Primrose, buttercup, wild Lilies and they in turn merge in harmony with the intensity of the wine sweetness. It’s only when you taste the spirit that your senses go into a hedonistic aromatic trance; Plums, soft green grapes mingle with a slipstream of cooling marine sea breezes, French oak, peat smoke, sweet barley all created by the super slow distillation and maturation on the West Coast of Islay where the air is pure and the casks breath in the salt laden air.

    Without doubt, this is one of my cherished children and in 55 years of distilling this beautiful spirit has made my spiritual journey complete.
