After 3.5 years in the bourbon barrel, we first put the whiskey in small ex-sherry barrels to mature.
After a year of aging underground, at 97% humidity, in these fine sherry barrels in the Ramsbeck ore mine, it saw the light of day.
However, our first 5 year old should get a special Scottish "spinn".
For another ½ year it matured in an EX-Laphroaig barrel.
This Scottish whiskey from the island of Islay, like most Islay whiskeys, was made with heavily peated malt.
Here the barley is dried under peat smoke. These malts have an unmistakable smoky note.
Our HIGH-Sauer-LÄNDER now has a touch of campfire in it.
This whiskey has fruity notes from the sherry barrel, vanilla tones from the wood, light sweetness of the bourbon and the touch of fire.
