    Really not wrong, the barrel has done a good job, of course you can still tell that it's young, but it's quite easy to drink

      The cognac comes through clearly, vinous, oranges, very floral, fresh, grape sweetness, some shoe factory, i.e. a slightly leathery note of glue, some mustard, chocolate, cocoa, sounds weirder than it is, after the first sip also somehow meaty
    • Taste
      Oily, chocolate, orange, dark, some oak, sour, vinous, also here a slight cognaca association, intense, good mouthfeel and goes well without water, even if it tingles a little from time to time
    • Finish
      Grapes, slightly sweet, but also tart, crushed grape skins, oak, becoming drier, warming, dark with a hint of Hanuta

    fruity on the nose, the cognac influence comes into its own. The taste is first peppery-spicy, then fruity again, extreme grapes; unfortunately quite a short finish. But nose and taste deliver great.
    For me with water much more pleasant and more to tickle out. There's no denying the cognac influence either way; with water, however, it becomes sweeter and "finer".

      especially closed, he needs a little. Then fruity, the cognac influence in the form of red grapes is noticeable and only gets stronger with more aeration.
      Honey sweetness, caramel, some vanilla. Something salty comes through in the background but isn't quite tangible (salty caramel?).
      In the foreground, however, are fruits such as juicy grapes, apples, oranges, plums and apricots. This is supported by a fine cinnamon/nutmeg spice and herbs. The herbs remind me of a sherry cask, probably. comes through the European oak barrel.
      The sweetness keeps increasing... interesting. The alcohol itself is well integrated; only stings if you get close. Overall, it looks fresh (not meant negatively).
      With water: sweeter, the honey has a stronger effect; the cognac influence is also prominent. More of everything reaches the nose. So water is good here.

      he soft, then extremely peppery hot on the tongue; hui the 59.4 can be felt very much. When that wears off, the cognac influence comes through again, light fruit; I have something salty again... at the second test I get whole milk chocolate - nice.
      Slightly tart note that turns into a herbal note. It goes dry on the tongue. The oak aroma is clearly noticeable.
      2nd Sip: more fruit, the peppery spiciness has subsided a bit; the cognac is extreme. Fun to taste the grapes.
      With water: softer, more comfortable; more herbs come through; the fruits and grapes then follow.

      With water: tick more herbs, less oak influence. Otherwise relatively the same.

    For a 3 year old, an unbelievable abundance and intensity. Not the slightest hint of youth, full-bodied, round, intense. The only point of criticism for me: The alcohol is not as well integrated in the mouth as it is in the nose.

    Apple Sauce & Pastry

    Apex means peak or pinnacle, with which Milk & Honey’s Master Distiller Tomer Goren wants to point out that this is up there with the best of what he has created so far. There are four expressions at this point: Cognac, Rum, White Wine and Pomegranate Wine. Thanks to Tom from Buds & Barrels I was able to get hold of two of them. I gladly start with the Cognac Cask with is basically their Classic with a finish on cask from a small but not-named cognac house.

    Wow, this is good! Nice notes of apple sauce, pastry, cocoa powder and chocolate, upholstered with apricots and peaches. A touch of cinnamon and cloves, as well as some aniseed and acacia honey. Off to a good start.

    The mouthfeel is fine. Almost syrupy in fact. Powerful, though. The spices kick in first: cinnamon, cloves, chili pepper and mint. That both red and yellow fruit and a truckload of apples arrive. A nice dessert whisky.

    The finish is very long, offers more baked apples and some mildly burnt butter.

    This is an impressive whisky. On a completely different level of what I’ve tried before from M&H. Around 95 EUR. Thanks to Buds & Barrels for the sample.

      Here notes of grapes dominate. In the background I have a combination of green apple with pears, honey, dark chocolate, a little spice with liquorice. A touch of pineapple combines with plums.

    A bottle of M&H Apex is an exploration of places and matters: our Head Distiller, Tomer Goren, specifically selects exceptional casks for each batch, chosen for their distinct location of maturation or to showcase the magic of wood and terroir.

    This small batch, single malt whisky reveals the finest flavors of 400-liter, French Limousin oak casks, previously used to mature superb Cognac. A vatting of carefully selected, ex-Bourbon and STR casks precedes a finish in ex-Cognac casks.

    Non chilled filter. Natural color. 59.4% alc/vol

    AROMA
    Warm spices, complete with cloves, thyme and star-anise, evolving into an exotic combo of cacao powder and mango followed by notes of dark chocolate truffle and stone fruit.

    PALATE
    Rich texture and a warm mouthfeel, with a hint of nutmeg spiciness. Sweet fruit, with a touch of tart red berries.

    FINISH
    Baked apple pie, rich in butter and enhanced by cacao and sweet toasted barley.
