    A welcome return of a Bimber classic – in a single cask format.

    During the creation of our award-winning, maiden Small Batch release - Re-charred Oak Casks, we reserved a very small number of our most exceptional casks. Following an extended maturation period, we’re now thrilled to release the first of these extraordinary Re-charred single casks – bottled at full cask strength.

    Cask #68 was hand charred by Bimber’s on-site coopers to level #4 char – also known as ‘alligator char’. This deep charring process caramelises the wood sugars, promotes greater interaction between the spirit and the oak and adds a layer of filtering carbon to the internal surfaces of the barrel.

    The influence of this intense char has imparted incredible richness and distinctively sweet notes into this single malt whisky. All of which perfectly marry with our fruit-forward, spice-led house style.

    Nose: The aroma of charcoal and oak dominates, the smoke lingers in the upper layer, and the sweet and oily feel at the bottom. The overall expressiveness is good, although it is very young, it has an objective maturity and does not capture the unpleasant malt flavor. The aroma gradually opens, and the acidic fruits are full of vitality, vanilla, cream, peanut skin, salty, and roasted.

    Drink: The oily feeling is online, the wine is full, but it will burn you at least, and you may need to add some water. The expressiveness of the tasting is still very good and very complex, with sauce, black pepper, tobacco, spices, oak, ginger blossom, and cream.

    Overall: For a whisky that is only three years old, I can't find any reason not to praise it. It has got good scores in all the items that make up my scoring system. I always know the young whisky, which can't be left for too long. I wonder if it will change because of it.

    Nice young whisky, not very complex, but would say 8-10y old on blind tasting.
