    Impressively, there’s pretty much nothing to fault here. Dornoch Distillery’s inaugural release is objectively excellent.
    • Nose
      A touch of aceto balsamico and crème de cassis combined with cocoa powder, rum raisins, sultanas. Strong notes of dried oats and barley husks, with a whiff of rhubarb and warm apple compote as well. Finally, just a whisper of melted butter, chalk and cinnamon. Really rather impressive.
    • Taste
      Super creamy mouthfeel. Lots of chocolate truffle on a backbone of gentle cracked black pepper and potent notes of raisins, with a touch of roasted marshmallow. Some subtle notes of peanut skin in the background. Water activates the oak tannins.
    • Finish
      A tad drying and lingering spices with a whisper of rye bread. Finally a touch of tobacco leaves and a slight ashiness. Medium in length.

    Love the Dornoch Hotel. Respect to the Thompson Bros as independent bottlers and their experimental outlook on distilling. I’ll watch them closely as they progress.

    I did an online tasting with Oliver Chilton of Elixir where he gave his thoughts on different yeasts and experimentation. His overall answer was simple; it’s not always going to be good when you experiment. Unpredictability is not an asset in business. The Thompson Bros are respected and liked in the industry, and everyone wishes them the best, but it will no doubt be difficult to grow a distillery with so much experimentation. Especially if the product is not always good..

    So how is it? Even considering it’s 3 years old, it’s still a big miss for me. I am in The Muskox’s corner as far as notes go.

    I do wonder about the collectors. They are the ones spending the money here (it has sold for over £1k a number of times). Fast forward 10 years; what is a 3 year old Dornoch going to be worth? Keep in mind we will also have these new distilleries coming of age also…Brora, Port Ellen, Rosebank, Chichibu, Daftmill, Shizuoka, Bimber, Waterford, Ardnamurchan, Ardnahoe, Torabhaig, Ncn’ean, Wolfburn, Eden Mill, Holyrood, Lagg, Ramsay, Sukinder’s soon distillery.. certainly others as well…

    Raisins, sultanas, currants (Corinth), thick and sweet. In some strange way I kind of enjoy it, especially on the nose.

    There isn't anything actually unpleasant with the taste either, especially as it fades rather quickly.

    Then again, a pack of raisins costs quite a bit less.

    Oof, not my cup of tea. I wasn’t sure this was scotch at first, but then I let my glass sit sealed overnight and came back with a fresh palate. There’s such a strong sherry funk. If there wasn’t any sulfur, that’d be one thing, but… yeah, there’s sulfur. It’s not as bad as some of the real egg-bombs I’ve had lately, but it really does spoil the fun for me here. If you’re into this sort of funky sherry bomb thing, you might really enjoy this bottling.
    • Nose
      Whoa, heavy sour-wine funk. Heavy dry sherry rancio, aged balsamic, dried apricots, yeast, and roasted nuts. Lots of cardamom, mixed citrus peels, potpourri, and sour cherries. Some toasty cereal notes: caramel popcorn, sourdough, shredded wheat. Dusty old wood and beeswax. Black pepper and a little bit of… pancetta?
    • Taste
      Medium-thin texture. Some heat, seems to be high-proof. Heavy sour-fruit funk on the arrival, then dense spices. Peaches in syrup, Asian pear, bitter orange, flamed cinnamon sticks, clove, and cardamom. Moderate oak, pu'erh tea, and burnt sugar on the development. A good bit of sulfur on the back end. A bit of a musty fenugreek note.
    • Finish
      Medium-length and fairly sweet. Various tinned fruits, grapefruit, grape skins, sherry funk, brown sugar, and yeast. It turns sulfurous, though that sort of fades just a little over time. Orange juice mixed with toothpaste.

    Very impressive newfangled whisky that tastes very old fashioned. An abundance of youthful vigor that is especially expressed in the delicious orange fruit scents such as mandarins and oranges. Surprisingly sweet on the taste and no sharp edges of young distillate. Nice asset to the Scotch whisky industry.

    I've seen the note about raisins, and now smelling it I can't un-smell them! They're everywhere on the nose, much like an open box of raisins that kids get in lunchboxes. Beyond that, we have cinnamon, some honeyed flapjacks, vanilla ice cream, and butterscotch. After a bit of time in the glass a soft hint of smoke and cigar box creeps in.. Beautiful viscosity on the palate, with candied lemon, rum-soaked raisins, milk chocolate, some mocha, black pepper, praline and butterscotch. Eucalyptus spice coming in on the finish, with raisins everywhere again, some butterscotch ice cream and chocolate mints. Very sweet and borderline sickly, but overall manages to keep an impressive balance.

    Not bad, but not very enjoyable. Very un-scotch, quite a new-world style.

      Yeasty and malty, young and spirity, hot, gingerbread, not so many flavors, very close to modern style whisky, hardly find any fruits.
    • Taste
      Oaky and inky, malty, porridge, oak spices. Quite hot and drying.
    • Finish
      Short, new make.

    I give it 10 minutes to open up.
    Nose: a direct hint of sherry aging, no alcoholism (and this is at 3 years old!), Malt, wet board, dates, minerality, a drop of polish and ... cucumber rossol, unusual ... 22
    Taste: body, dense, energetic, here you feel the strength ... bitter chocolate, dark dried dates, black pepper, salted wood, tobacco, a little metallic taste (reminiscent of rum) 22
    The finish is short, but pleasant, with hints of dark chocolate and pepper 22

    I added a clear stump on my own for 3 (Karl, THREE) years of aging and this result ...
    Young and daring, unusual, but damn attractive malt. May God bless these guys - I'm sure they can cut through all the whisky of the snobs.

      Very much towards sultanas. Figs in the background. Then milk chocolate. And it’s a little floral. Lemon pastry. Acacia honey and red apples. Oats. Cranberries. A faint hint of tobacco leaves. Caramel. Water brings out lemons and a note of tropical fruit, mixed with those very same sultanas.
    • Taste
      Honey and sultanas again. Red apples. Dark chocolate and oats. Later also a touch of sourness from cranberries. Black pepper, cinnamon and ginger. Water adds lemons, macadamia nuts and tobacco.
    • Finish
      Mid-long and a little dry at first. Cranberries and some spices. Also, the tobacco leaves are back again.
