    nose:
    vanilla, caramel, apple, yellow fruits, sap,
    malt, a little dry wood
    stuffy:
    spices, almond shell, it's very young, wood chips, sweet and acidic fruits, the return of vegetable sap
    final:
    short on caramelized vanilla, sweet yellow fruits and bitterness.

    In a blind tasting, I would guess this to be a Lowlands whisky, with some overripe fruitiness, moisterous and dusty touch.
    This dusty and moisterous side turn more to the background in the taste, more 'normal' fruits and sweetness.
    This one needs some time, it's definately growing.

      Fruity, a bit towards overripe fruits, wet cardboard and dusty, moisterous notes, vegetal.

      Quite some power, pepper, fruits and vegetal notes. Ripe citrus, some floral touch.
    • Finish

      More smooth now, sweet and fruity, orange, vanilla. A bit warming in the belly. Medium long finish.

    Ordinary nose, deceptively flattering on the palate, a finish that only reminds the youth of the juice. Without interest.

      On the nose, acid green apple, lemons and grapefruits. Vanilla and white oak.
    • Taste
      Very vanilla in the mouth, lots of dry wood, lots of pepper. Soaked from the barrel.
    • Finish
      Dry and bitter vanilla finish.

    Tasted blind.

    Turns out this was my first Bimber. I'm not terribly impressed. It was okay for such a youngster, but I think both Cotswolds and Waterford do this better.

      Fudge, booze, pencils, and erasers. Dunno why the pencils are so strong. Sour fruit candy.
    • Taste
      Strongly woody, young. Pencils, pepper. The distillate beneath feels so bland it could be Strathmill.
    • Finish
      Bitterish. Some chocolate sticks in my gums.

    Bimber ex bourbon cask batch 2, 52.2%.

    Pale yellow.

    Aroma is estery fruits, lemon boiled sweets, lemon sherbets, pineapple cube sweets, shandy.

    Taste is very light indeed at the ABV, some shandy and more pineapple cube sweets. White pepper linger. Good whisky. Doesn't taste young at all. Good fruity estery fresh spirit. Very good. 3.5/84

      Punchy, oily, fruity, good sweetness, honey, apple, pear, ripe banana, little coconut powder, little leafy and grassy, citric, grapefruit, cookie dough, gin - yes, definitely some notes of gin means juniper, and some botanicals

    1581) Bimber, Small Batch 02/2020, Ex Bourbon Oak Casks

    Bimber - Moonshine in Polish.
    • Nose
      N- Another young distillery, crossed the border to the capitol London. Banana, peaches with floral, you get this gingery spicy heat derives consistently that teases you nasal with quintessential bourbon cask characteristic. Underlying dried dates, rum notes, before citrus lemon developed along with nutmeg and grassy honey. (88/22)
    • Taste
      P- A carpenter workshop? Oak-y, subtle sweetness with bold wood resin and doses of floral. Wood shaves with dusts of earthy spices and young fruits. Hint of coconut and stiff inevitably, but acceptable as this is indeed still young. (86/20)
    • Finish
      F- Long, slightly underwhelm palate follow by full finishing, finely concocted pickle brine. Solid, crisp with a touch of bitterness. (87/21)

      B/B- 87/21 At barely legal age, a very nice Single Malt that even bottled at this high strength, the distillates still appeared soft and velvet. And is unpeated.

    An interesting whisky, despite a little youth - certainly not my last from this distillery. It shows that whisky is also possible outside of Scotland.

      Light, fresh aroma of pears, mirabelle plums, citrus and vanilla. With some candy and coconut - slightly reminiscent of rum aromas.

      The taste is clearly spicier with a little white pepper; plus the sweetness of grapes and ripe pears. The alcohol is cautious, but a few drops of water are still good for him.

      Medium to long, here some oak notes come through with a light liquorice note.

      Green apples. Apricots. Crème brûlée. Followed by fresh lemons and gooseberries. A hint of marzipan and butter. A little bit of coconut too. Later also acacia honey and a floral note. Very nice!

      A lovely oily texture. Unripe pears. Vanilla, caramel fudge and a hint of toffee. But also those sweet banana candies. Then acacia honey. Pink grapefruit and lemons in the background Quickly followed by cappuccino and the tiniest touch of oak.

      Mid-long to long. Honey, vanilla and apricots again.

    I wasn’t sure. Didn’t know what to expect. But what a pleasant surprise. Very fine, complex whisky. Well matured and without any off notes. No sulphur. Absolutely flawless. With a few drops of water you can be hooked forever. A great drum. Bimber, well done! Bring some more?
