    official information from the distillery:

    The mild Signature Edition SIX is a Franconian whisky version. The special barley malt "Barke" comes from Bamberg in Upper Franconia and provides a robust, grainy aroma. The barrels of the noble Pinot Noir come from Lower Franconia, from the famous Fürst winery in Bürgstadt am Main. With this reference to the beautiful home region "Churfranken", the new single malt whisky clearly has "terroir".

    with water: it becomes softer, very lemony

    Conclusion: young but drinkable. I like the mix of barrel selection, the bourbon and red wine barrels in particular come through quite well. But ultimately just too young a malt.

      harsh, very young, cereals, oats, mineral, but in between a warm wave of vanilla and cake batter always comes through, with clearly berries and banana, overall quite OK
    • Taste
      very thin start, light vanilla, berries, pear and only very subtle oak
    • Finish
      Here you notice the youth most strongly, quite weak finish, very short, grain with vanilla, berry fruit and very subtle oak notes, on the back slightly dry

    Conclusion:
    The sixth edition is now a terroir whisky from St. Kilian and should be a Franconian whisky version. Barley malt from Bamberg and wine barrels from a winery in Lower Franconia. But what the Ex-Rye whisky barrels are supposed to have to do with Franconia remains a mystery. In my opinion, these rye barrels get through too much and the wine barrels too little. Overall, the barrel influence is very low and you can tell he is young. In my opinion, the barley malt brandy character comes through too strongly. So unfortunately not my case yet. It will be interesting when he has reached a certain age.

      The first impression is sweet and fruity, pear compote, green apple, powdered sugar, slightly malty, jelly bananas, gratinated bananas with honey, milk chocolate, mineral notes after fresh rain on a stone floor, in the background very light malty dark tones of rye bread, light cowshed moments, cereal
    • Taste
      Sweet and fruity very similar to the nose, cherry jam, vanilla crescents, green apple, pickled pears, baked bananas with honey, spicy gingerbread, exotic fruits like apricots, mandarins, sharp notes of ginger and white pepper, light grapes, milk chocolate
    • Finish
      Fruity and rather short finish, becoming very dry like a red wine, andstringency, light vanilla notes, light grapes, bananas

    I really enjoyed this sixth Signature Edition from St Kilian Distillers. The interplay of yellow, partly exotic fruits, creamy vanilla with barley sugar as well as the rich and warming spices create a pleasant harmony in aroma and taste. No trace of youthfulness, it seems amazingly mature. An excellent composition of the three different types of casks, skilfully created by the master distiller and blender, Mario Rudolf. Well done!

    • Nose
      Fresh and light fruity on the nose with apricot and tropical fruits, accompanied by delicious grapes and vanilla cream. This is followed by spicy tones of ginger and some pepper with notes of malted barley in the background. Very appealing and by no means young.
    • Taste
      Immediately creamy sweet and wonderfully fruity on the palate with grapes and again apricot as well as exotic fruits that are difficult to identify individually, banana maybe. Then a warming spiciness becomes noticeable with ginger, clearly pepper and oak. This is accompanied by slightly bitter notes of grape skin and malted barley towards the finish.
    • Finish
      The finish is medium to long, pleasantly warming and initially sweet and creamy with barley sugar and vanilla. Then slightly bitter notes of grape skin and oak are added.

      With water: After adding a few drops of water very fresh on the nose with grapes and yellow fruit jam. This is accompanied by creamy vanilla. Overall a little less spicy. Intense and spicy, however, on the palate with much more pepper and ginger. Then some vanilla, malted barley and fruit sweetness towards the finish. The finish is of medium length, very creamy with vanilla and barley sugar, then becomes a bit drier and slightly bitter with grape skin and oak.
