    So this year Bourbon and Oloroso Casks, according to a statement by Graham Coull - Master Distiller at Dingle - in a ratio of 73% first fill Bourbon Casks and 27% first fill Oloroso Casks.
    In contrast to the 3rd release, in which port casks were used instead of the Oloroso casks, the 4th release is less sweet, more in the area of dark forest berries and blackberries than it has sweet raspberries and strawberries. It appears more mature and more sedate. And it should now also be a year older than its predecessor - around 7 years? In any case, a very nice single pot still, slowly but surely developing into a classic.
    • Nose
      A spicy, fruity start with notes of forest berries, blackberries, plums, dried figs and dates. Pleasantly intense and varied pot still spices, which mainly manifest themselves in the form of cardamom, tarragon, thyme, savory and turmeric. Milk chocolate, café au lait, warm toffee, honey and fudge. A deciduous forest in summer. Spices, fruits and chocolate / caramel notes complement each other perfectly.
    • Taste
      A mirror image of the nose, with the difference that chocolate notes and roasted espresso beans play a role right from the start of tongue contact. Otherwise you will find the berries from the nose immediately in the dry start, their counterpart, the pot still spices, also not hold back. Here now a larger proportion of delicately bitter spices, more tarragon, thyme and savory than turmeric. Grapes, plums, dried figs, but also a lot of chocolate and some marzipan bread.
    • Finish
      Medium to long (sic!) And dry. Does not rest, does not become thin or watery, does not fray, gives everything until the not so bitter end. The fruits linger for a long time, pleasantly covered by the still present spices.

      A bit earthy, sour at the beginning, then it becomes flowery and fruity. Different herbs like rosemary, tarragon, and something I can't name exactly.
      Spices and old books?

      The Oloroso finish comes through every now and then, but is quickly displaced by the bourbon.

      The nose is almost a little too complex for me, or rather too restless.

      The bourbon comes through stronger here.

      Butterscotch, some earthy tones, shortbread, cocoa
    • Taste
      Sultanas, dark chocolate, malty (in a Dingle-whiskey kind of way) then it gives some pot still spice in form of ginger spices. Really lively.
