    Nearly all ingredients are sourced near the distillery : casks from white burgundy wine are the farthest. I like this.

    N : bold mix between strong violet flowers and unripe yellow melon. A touch of cinnamon, maybe some wet wood too in the distance and with it some usual notes of bitter cocoa, almonds.
    Revisited a few months later, I'd add a strong camphor note.

    M : on the bitter, pungent side. Still tasting violet but not sweet anymore. Bitter cocoa really, and silky which I think is usual with white burgundy casks, and which I really like. Touch of dry hay and sadly a bit of alcohol.

    F : short but fragrant, on the light flowery side of the mouth. It has a perfume-like undertone which lasts long. Still bitter.

    Not sure if it would've been better at higher abv, because of the overall bitterness. It's good, not great, too young for sure but the way the distillery works has to be acknowledged. 6/10

    The # series is done every year with local restaurateurs and wine merchants, perhaps enthusiasts can join in to define the juice that comes out?
    Note that the liquid is still quite strongly reduced, pure habit of the region accustomed to brandies containing 40 °, and "secular" tradition of owners who do not conceive an alcohol too high in alcohol.
    • Nose
      we start with a characteristic rum scent!
      woody, vanilla, sweet!
      then aroma of forest fruits, a little dark chocolate and almonds
    • Taste
      the imposing woodland, a little land too,
      very fragrant, the cooked fruits, macerated, especially on blackberries or currants, it is quite fine and subtle; then the candied fruit soaked in alcohol, the candied cherry appears with a little bitterness, quickly concealed by the greater reduction in alcohol on this series, it's sweeter, the vanilla comes back with the woody flavor of wood chips soggy. a little gingerbread as well and its candied fruit again.
      Complex scents in turn, macerated and sweet fruity, wood and earthy side in addition to bitter almond.
    • Finish
      candied black fruits, chocolate, toasted back, oaky, spicy and medium length that evaporates slowly.
