.finishing a 1year old spirit in px ?
using extremely small 25 liter casks with lot's of color and flavour extraction ?
using 3 different casks for a very very very young whisky ?
he should start with the basics 3-4years in second fill bourbon , 5years in first fill bourbon
10years in oloroso sherry
those experiments with the small wine casks and 4 finishes are fun but they don't produce a good whisky there is just to much tannin extraction
what can i say a 1 year old spirit with a px finish ? how long was this finish 1week ?1day ?
very closed nose it's almost like smelling new make , the aromas are almost non existing
it starts of with a faint barley sugar sweetness a hint of apricots , some resin, vanilla but everything is very faint not a lot of complexity
sweet arrival but again those same boring and extremely sour notes
to be honest this is far from good lots of unripe fruit , green apple , very unripe pear , very very sour and unripe pineapple , unripe lime peel , some glue and woody notes
white pepper , vanilla , and a blast of unripe and sour fruit
