3 years, 10 months, 23 days old, you really have to let it (and the whiskey) melt in your mouth. Where other whiskeys of this age still bathe heartily in pear water, put warm tin on the tongue and don't stingy with freshly stripped branches, this boy already delivers a lot of what makes a good whiskey. 136 hours of fermentation time, by the way.

Nose

Dried herbs, hanging in an old room, the floor made of clay, dried flowers in a vase in the window. Cold coffee grounds mixed with block malt, yeast dough and a hint of dried lavender. Marjoram, chervil, tarragon. And yet there are also hints of a fresh note of freshly sliced red apples and mirabelle plums.

Taste

Sweet apple crumble, malt, toffee, milk chocolate. And then a dry wood note comes around the corner pretty quickly, bringing leather notes and tobacco leaves with it. Slightly tart herbs on the tongue - marjoram and chervil to it - give it a certain depth. Tart honey, sugar beet syrup.

Finish

Soon comes to a fine bitter conclusion. Fudge, caramel, dark chocolate, and cold coffee bring up the rear.

I haven’t been overheating my F5 button to get the first official bottlings of the Waterford distillery but I was curious enough to join an initiative in which 4 different expressions were sampled into 3cl bottles. So I grabbed my sample set. This is going to be the third one I taste but I can’t say I have tasted anything extraordinary or even convincing until this point. As far as I’m concerned, I don’t get the hype around Mark Reynier and his Waterford. Maybe in 10-12 years but not at this point.

Nose

Again young & grainy. In my opinion this is not much more then underaged whiskey, boosted by some fancy casks. Besides grainy again I get that schnapps feeling again. Some green apples maybe and other unripe fruits. Vanilla yoghurt and a weird and distracting woody note.

Taste

On the taste young and restless. I find it unpleasant. It does have some kind of spicy and creamy arrival but that’s about it then. Not much in it and not much in going on either. Nothing exciting, nothing to be remembering tomorrow.

Finish

Short, young, grainy. I don’t feel like giving any more comments. This goes down the sink instantly and that is something that rarely happens to me...

My least favourite whiskey from Waterford so far, mainly because it's lacking on the palate.

Nose

An attractive malty, rye bread-like introduction with some clear yet subtle red wine influences, touches of red herbs, and red apple skin as well. Agreeable but not very expressive.

Taste

Creamy, spicy and somewhat vegetal. Some soft vanilla, ripe apples and apple compote as well, but white pepper, freshly cut grass and barley husks prevail.

Finish

A touch of processed sugar, but mostly malty with a touch of spicy heat. Finally some more apple compote.

Beautiful blue cobalt bottle with nice glass cap.Lets try the juice now..Young but not sharp very yeasty and malty.I cant distinguish the barrel types.I would prefer an ex bourbon only rather than all these types.The alcohol does not hit you like it should(well done here)I believe that they should have waited for at least a couple of years though

Yes this is a young whiskey, but what I like about this Waterford Ballymorgan is that it isn’t that restless as a youngster can be. Very curious what a version 1.6 or 1.8 will deliver. This 1.1 is a bit shy on the nose with wood shavings and bitter herbs. Tastewise it’s quite sweet on fruits, honey and chocolate, slightly bitter but not annoying, I actually like this part.

A young whiskey, This shouldn't have been bottled. Might be way better if given 6 more years.

Young and a little restless, some fresh green herbs, marzipan and freshly cut trees.

Taste

A tad bitter, some choclate hint of marzipan, sweet fruit and a bit of honey.

Finish

Short length. Quite young and restless. Gives some sugar sweetness and fades away with some marzipan.

An interesting Irish whiskey for its young age. the nose is pleasantly fruity. The rest shows a fairly active cask and powerful woody and vegetal notes which tend to erase the freshness.

Nose

Very pleasantly fruity nose, with the influence of natural sweet wine: notes of white peach, muscat, fresh apple. After aeration, we find the barrel and more classic spicy notes.

Taste

Slightly creamy texture, not too sweet. There are some fruity notes at the end of the mouth (fresh apple, peach, raisins), but spices and vegetal notes dominate. The whiskey is betrayed by its youth. We will note pleasant notes of vanilla in the middle of the mouth.

Finish

Persistent finish, rather vegetal and woody, with a rather peppery whole. Good but classic, and in the absence of the fruitiness of the nose.
