This single cask bottling, distilled July 2017, spent two years maturing in a first fill Jamaican rum barrel. Cask # 0185 was bottled December 2019 and yielded 268 bottles at a natural cask strength of 61.3% ABV.
Our tasting notes are as follow:
Color: Lightly Steeped White Tea
Nose: Opens with an abundance of tropical fruit notes (ripe banana, warm mango, and freshly sliced pineapple) but keep exploring and you’ll find tinned fruit spooned over angel food cake, pear juice, guanabana puree, and even hints of roasted agave and nopales.
Palate: Bruised pineapple, strawberry greens, toasted coconut, vanilla extract, warm scones lathered with strawberry jam and clotted cream at an English high tea. As the flavors begin to layer on the palate a fresh Jalapeño note is revealed with a return to the tropical fruitiness of the nose.
Finish: Initially quite peppery but transitions to the dense sweetness of Scottish tablet.
On the label: The dram opens on scents of tinned pears and candied pineapple rings. An incredibly rich malt offering up flavors of vanilla bean ice cream, fresh jalapeño, and a return of the pears we noted on the nose. The finish is long, peppery, and oh, so pleasing!
