We are especially interested in the soft whites here, of which a barrel from Sot De l'Ange has magnified a 17-year-old distillate, put in barrel fino in 1997.

honey, candied fruit on white grapes paillasse on a woody litter and a little soaking this wood which is aged, degraded.
spicy sweetness, fresh coconut oil
a little dry mold, yellowed herbs, a little menthol in return.
a little sweet caramel, more fruit on the peach there -
roundness due to an overall sensation:
sweet honey, vanilla, oak, fruit on the green apple, very juicy and dehydrated apple rings very sweet
sweet spices then slightly peppery, honey in syrup with a little herbs (dried flowers!), a melting pot of diffuse scents, which turn on the palate and which move away from the "traditional sherry" of the bottler .
the soaked dry white grapes and the woody area, which is also moist at the end. -
long, and complex oscillating between the fruits lighter than a sherry and fresh, and a persistent woody scent, all complemented by sweet vanilla honey, the grains above the honey jar.
slight bitterness cream that potentiates these scents even more.
