I’ve really been following these Burnside’s for a few years now. IMO they are one of the better parcels of modern casks.

This one (so far, just opened) falls in the middle of the pack, but quite good nonetheless. I’d say If you’re a fan of waxy, honey, floral notes, you should check it out.

Starts on paraffin, nice soft floral honey notes (honeysuckle), meadow flowers. White fruit nectar. Peach, honeydew, cantaloupe, apple, dragon fruit. Crisp and clean, but very pleasant

Waxy, clean and crisp. Mouthfeel is full. Gentle flowers, apple, melons, pear, ginger.

Zippy. Crisp, perhaps even tart. Waxy Apple skin, green peppercorn, ginger, unripe pear. Still some floral notes.

Chalky / mineralic, dry and acidic, with a nice waxiness that hints at the age. Firm and understated, but immaculate. Gets better and better with time in the glass, with increasing warm wood notes and pretty much a whole beehive.
    • Taste

Classy, elegant, refined, a bit subdued even, but lovely (and delicious) all the way. Stunning performance at this price level.

There's only the slightest bit of zesty zap at the very end, other than that it's all beeswax, dry-white-wine minerality, soft bitterness and a big honey base.
