    This is a very unusual whisky and a very successful experiment, which involved high quality barrels! A lot of interesting spices in the aroma!
    The taste is simply gorgeous for this age!
    An ideal whisky for lovers of bittersweet whisky, rich in a bouquet of spicy spices that came from India on an old merchant ship!

    • Nose
      The fresh, sweet, spring scent of a garden with blossoming fruit trees! Wow!
      Creamy fruity, spices and subtle rum esters! Spices: anise, lots of cloves, star anise, cinnamon.
      Pure, crystal clear fragrance! Somewhere in the distance, copper hues are felt.
      The fragrance is single-layered and does not require vigilance, but the most focused on its composition and well-honed!
    • Taste
      Bright, vibrating with subtle hints of fruits and spices. The spices are the same!
      Shortbread cookies smeared with a thick layer of butter. But you can’t do without the burning of young spirits!;)
      Lots of tannins, confidently astringent in the mouth. As decantation gains tannic bitterness.
      Sweetness: 9 out of 10
      Saturation: 9 out of 10

    Aroma: plums, fruit resins, echoes of chocolate
    Taste of cherry, plum tinctures, dessert, perfumery.
    Aftertaste, cherry compote with a slight bitterness, rather short.
    Total, young, unsophisticated with a dominant cherry.

    A bowl of gummy bears and a basket of ripen peaches and pears in the wood department of a DIY shop, decorated by lot of highly fragrant flowers!

      The nose began with fruit gummies. There're a lot of ripen peaches and concord pears. Sawn wood is, of course, prominent. And it's quite floral too. The aroma turned slowly towards the acidic side, like walking in a DIY shop surrounded by new plywood. A hint of black currant hard candy added to the juiciness. There's also a little oatmeal and warm beer. With time, the nose settled in being very floral. It is indeed a very fragrant dram.

      The palate is like an explosion of a bowl of assorted fruit gummy bears in the mouth! Enjoyable! Like in the nose there're lot of ripen stone and yellow fruits! The mouthfeel is soft, clean and mellow.

      Surprisingly the resinous aftertaste is less than expected which added to the scores. The fruitiness lingered, back by a little bitterness. The finish, although not chest warming, is long enough.

    What a nice single malt is Bimber Distillery creating down there! It is a very young distillery, founded only in 2015, which means the whisky is very young too, but full of flavor and very nicely presented.

      The nose is outstanding, like a basket of fruits, with apples, pears, peaches and pineapples. A lot sweetness from honey, vanilla.

      The taste is even more astonishing, sweet with a bit of dryness, like a crème brulée with cereals, followed by pineapples, apricots, apples and sweet honey. It is creamy, complex, spirity, yet balanced; all the flavors live in harmony from the arrival and through the development. It is amazingly good.

      The finish is medium long, a bit spicy surrounded by fruits and cereals.

      spicy (spicy paprika) and mentholated, bitter notes of bitter almonds and gentian.

      medium length, the bitter notes already felt on the palate remain, which finally vanish leaving a balsamic sensation

    This is a sample courtesy of Holborndrinker.
    The nose is sugary sweet as in boiled sweet and I could pick it up in the new make. A tin of tropical fruits and wood shavings.
    The taste is unbelievably smooth for such a high percentage, do I have the right one?
    In the taste it's sugar and spice and all things nice,must have been a girl who made it.
    It's like drinking Lilt but in whisky form.
    The finish is crisp and dry with wine gums on the death.
    This is really nice but the price is unrealistic which is a shame.

    A young strong drink, reminded me of a hot compote or jam made of yellow apples, to which orange juice was added.

    Tasty. Starts and ends with orange liqueur.  Not super-complex, but satisfying and very drinkable.

    I don't remember where I got this bottle, but I've had it for at least a year and it's a 3rd gone.

    I looked it up online to refresh my memory and found out it is now one of the most expensive whiskies I've ever owned.

    Not **exactly** sure why.

    Granted, for its age, it *is* very, very good.  The oak is never overbearing, but it is present and threatens to add bitterness that never quite materialises. The finish is nice and lasting, but on the whole, uncomplicated.

    In the 3 years it has been in the cask, it's unarguably picked up quite a distinct personality between the fruit and the mouthfeel.

    Not a £130+ personality, mind you.

    IMO £130+ for a 3 year old whisky is ridiculous.

    Would i drink it again, if offered?

    Fo Sho. I'd have that away in a second.

    Would I pay the going rate instead of getting something else?

    Unlikely.

    As a fellow Londoner, I wish Bimber well,  I think they are well on their way, but I do think there's a real danger of them becoming over-hyped.

    I look forward to their future offerings, if I can afford them.

      Toasted brown sugar notes, like the crispy bits on an unevenly cooked, but still tasty pineapple upside-down cake.

      Stewed tropical fruit and Caramel. Marmalade.  Astringent tea tree from the oak is ultimately beaten out by sweet fruit and buttery/resin.

      Some quickly passing effervescent pepper which fades to more familiar woodspice over time.  Cointreau. Again.

    C: This is a release the Bimber Brigade seems to rave about more than all the others [so far]. Being so ‘hell for leather’ cask-driven, it’s a bit disappointing straight after the fabulous new make, but these are still just early days for the London-based distillery, and indeed, for many of its fans. Bimber offers exciting new developments in the current climate, but I won’t be wearing their scarf just yet.

    The nose is great. The palate and finish are lot less. Herbal, green and too bitter. Almost like a rye, and I don’t like that (yet) ;)
    The buttery nose is only found at the beginning of the taste... verdict for now 83 points / 6,5.

    C: Starting edgy and impactful, specifically with pineapples [Wayne] on nose and palate, it becomes more & more honeyed with time whilst a desirable sweet < sour character clearly shows. Excellent work in progress.

    Overdose

    Bimber is a brand new distillery in… London! They only got under steam in 2016 and end of last year they launched their first Single Malt London Whisky, a release of 5.000 bottles, whisky matured on re-charred oak casks, char level #4 on a scale of 5.

    The nose prickles and shows quite a bit of oak in the guise of wood shavings and furniture polish. Then a big candy-like note hits you on top of some pineapple on the barbecue, baked pears and candied syrup. Black pepper, thyme and cinnamon. Toasted and caramelized wood. Apples in a frying pan with an overdose of baking butter. It takes some getting used to.

    Nicely oily, but immediately piquant on pepper, cloves and cinnamon. The thyme becomes quite big and give it quite a green hit. Add some eucalyptus. Some burnt sugar in – again – an overdose of butter. Oranges in the distance as well as some rye bread. Gingerbread.

    The finish is long in which the woodspice continue to prickle and candied orange peel has the final word.

    Very young whisky with some extremes. Not bad at all, but a little over the top on wood, in my book. Hence it leaves the mouth parched.

    Good quality dram for 3 years of age. However, price is definitely too high for what it is. Value (£65) : 4/10

      The fruity spirit definitely shines here. Some stone fruits, ripe mangoes and loads of melons. Then the charred oak leaves notes of dark chocolate, mocha and cinnamon. Vanilla custard with caramel on top. A touch of orange and very floral. Quite perfumed then a touch of white pepper warmth.
    • Taste
      Creamy mouthfeel. Honeyed. The charred oak influence is dominant here with some burnt sugar, oak tannins and drying ginger spice. More mango and melon notes. Some bitter orange peels. Cinnamon and more white pepper. Almond extract and milk chocolate.
    • Finish
      More mocha notes here. Quite a lot of drying tannins from the oak. More of that white pepper spice.

    For a still very young malt of a new distillery, this is already quite promising.

      First impression very sweet and light fruity. Then becomes malty over time. Reminiscent of molasses.
    • Taste
      Spicy on the tongue than on the nose. Quite a lot of pressure. You can feel the somewhat impetuous youth. A lot of vanilla.
    • Finish
      Very short finish. A little spicy.

    This is a pretty nice release. The wood note is prominent at some points, but it can have it. Very oily and nice mouthfeel for a 3 year old. Quite pleasant!

      Vanilla, a hint of coconut, it’s a bit woody too. Pineapple. A buttery note. Honey, apples and then toffee.
    • Taste
      Lovely oily mouthfeel. A herbal note, lingering eucalyptus. There is some vanilla again. Then it goes towards spices such as cinnamon, cloves and black pepper. Caramel. The wood is here prominent as well. A light coconut note.
    • Finish
      The finish is long with mostly mint.

      Very rich, thick sherry influence with mushrooms, chocolate and an abundance of dark, syrupy fruitiness — mainly cherries, some strawberries. Not too dry, which is sometimes the case with these heavily sherry-influenced whiskies. Finally a touch of toasted oak and tobacco leaves.
    • Taste
      Oily stuff. Modern sherried whisky with a pronounced but agreeable spiciness. A touch of almond paste, rum-soaked raisins and poached pears, but also milk chocolate. A whiff of burnt caramel.
    • Finish
      bit tannic but mostly more of the above.

      Intense and full nose, chocolate, sweetness, with a lot of caramel and dark notes. I get little direct alcohol even though the malt is over 50% vol.alk. Has. The scent is beautiful in the glass. I get more and more pickled fruits, some polish and lots of citrus notes. Here and there a little more menthol and more and more spice.

      Significantly more storm on the palate than the nose promised, intense citrus notes, sweetness take over the entire mouth. It tickles the tongue a little. Significantly fresher and untamed then again wood, seasoning and some pepper. A little thin and then more intense ... light fruit and acidity. The darker notes only come back gradually when the palate has got used to it.

    Agree to Angus and Serge, a pretty good young whisky, crosstasted with Daftmill 2008, Mil&Honey Den Haag, Schenk‘s by Michters and a Chichibu SC #3835. Bimber and Chichibu win that Session. This company is on a good way. One of the best 3yo I had so far.

    herbaceous, spicy, but also fresh on the palate, a little pastry with vanilla and tart apple
    on the palate, sweet sensation, herbaceous, mentholated, still cereals and fruits in return (compote a little overcooked by the fire!), a little sweet, a little brandy, a little caramelized, the fruit draws on the candied pineapple, dark chocolate too.
    the finish on sweet sherry, woody, spicy, vegetal again and this freshness that stays on the herbs.

    For a toddler of 3 years this is a decent dram - easy to drink until it suddenly hits you - the floor that is as you'll be as pissed as a pudding.

    A proper second album from Bimber Distillery that's not all about the cask.

      An initial sweet, tinned pineapple note with vanilla custard, candy hearts and a whisper of mocha tart and cinnamon. It has a buttery quality to it, but also nice notes of red apples and pear skin.

      The palate's signature is much more oak-y than the nose suggests, which does a good job at 'hiding' the high char level, although it never completely goes over the edge. Love the oiliness of the spirit. The pineapple makes an encore and is accompanied by fudge, caramel and even a hint of lime juice, but there's also lots of cloves and a touch of pepper and ginger, skewing the balance somewhat.
