    This was a neck pour of a bottle I purchased recently. Originally bottled in 2019 so its a fairly recent Caol Ila aged in refill bourbon and then, prior to bottling, finished for a length of time in a PX sherry cask.

    Colour: Gold

    Nose: Soft and fragrant by Caol Ila standards. Lots of juniper, caramel sauce, boysenberry, orange peel, soft white pepper and whiffs of jellied dates

    Taste: Thick, buttery and oily with lots of orange cream, smoked pork rind, cherries, prunes, lemon squares, green olives, raisin bread and blanched almonds

    Finish: Short to Medium with lingering allspice, pepper and wet grass

    A wonderful experience of a whisky until it gets to a somewhat disappointing finish. The nose is inviting and unique with more floral qualities that show up briefly at times on the finish while the palate is a fine array of oily lushness and fruity sweets with a bit of a hot finish where the floral elements jump back in briefly but don't stay for very long. Overall, a very unique but still a "usual" young Caol Ila with a bit too much bite for my liking but still a very good bargain Islay for the price it released at.

    A great Caol Ila.

      Fruity smoke. Yellow fruit, sweet peat, honey, citrus, subtle smoke. Soft, rich nose.

      Oily, sweet, and smokey. Red fruit, honey, saline, soft smoke, caramel, and nice spice.

      Long, with chilli, sweat peat, and smoke.

    A sweet whisky, with peat in the background. At the end you notice some sour flavors.

    Caol Ila never disappoints! And this North Star Release gives that wonderful spirit a nice layer of sweetness with that PX finish. Value (£56) : 8/10
    • Nose
      On the nose upfront it seems very clean. By that I mean bright fresh lemons and a somewhat antiseptic scent. Some notes of sherry with dried fruits and some plums. Brown sugar and burnt caramel. Some orange or tangerine with dark chocolate. Minty at the end. The medicinal, ash-like smoke is just underlying in the background and is very well integrated with the PX influence. A plasticine-like note as well.
    • Taste
      Burst of light citrus fruits and dried red fruits, reminiscent of raisins and develops into a balanced bitterness with lemon peels. Some vanilla and dark chocolate. The peat is more sooty and tar-like on the palate. Oily and quite maritime. Some wood spice as well giving this a peppery warmth.
    • Finish
      Again more of that ashtray-like peat on the finish. Medium in length and bittersweet with the wood spices carried over from the palate.

    Last pour of a night. Smoke show to finish out a small tasting. What's it like? Sherry minlging with smoke in harmony. The balance is really goignt o throiw you off when you see the age!

      Wow, this is a suprise with somethign so young. Sherry and peat in very wonderful harmony. Smoke and no fish, malt and no seaweed, but instead sweets and fruits meet peach and wet stones.

      Okay, here;s where it really shines. No water, water disects the smoke, sherry and malt. Thisis nice for dissection, but the harmony is really crazy here, new/modern sherry meets modern smoke. Malt and herbal mint, stem ginger and sweet matly porridge, fnatastic balnce.

      The fade out is amazing. That modern sherry lends enough sweetness to the dram to make it continue for ever. Smoke and wafts of mineral meet fish oil and a touch of maritime. Some how much more happy maritime notes though, not an abandoned tugboat, but rather a happily working seaport with fish and tobacco, wellies and smoke.

    Sweet Islay

    Caol Ila? Did someone say Caol Ila? Me, me, me! I have a soft spot for this giant from Islay. And this was finished on a sherry cask and bottled by my buddy Iain Croucher from Glasgow. Well, in that case, I’m sure I need a bottle. Said and done.

    Fish oil, seaweed, lime, sultanas, peach, cigar box, ashes and apricots. Hello? The party has started already! The smoke is very subtle and clearly plays second violin. It’s the sweet fruit and some caramelized wood that grabs your attention – and rightfully so. What a fantastic nose indeed!

    The body is good, the strength nigh perfect. Absolutely no bite, which proves the alcohol is perfectly integrated. Chili pepper, licorice, toasted oak and a pinch of salt come first, only to be shoved aside by chocolate with banana cream (I kid you not!), honey, caramel, apricot marmalade and blood oranges. Boy, oh boy, this very enjoyable.

    The very long finish is a fiery battle between salt and sweet. It’s a tie, but what an absolute delight.

    This is definitely one of the best young Coal Ila I have tried recently. Available for 60 to 70 EUR. Highly recommended.
