    New Highland Sustainability Distillery named after the peninsula of the same name in the Western Highlands, owned by IB Adelphi, opened in 2014. Technically not whiskey yet, as it contains spirit with less than 3 years of maturation.
    Good whiskey, robust, very tasty. It reminds me a little of the Finlaggan Cask Strength
    • Nose
      raisins, milk chocolate, mon chery, light mineral peat, zero alcohol. With water comes a fruity note, but always wrapped in chocolate, and a hint of powdered sugar.
    • Taste
      on the palate it tingles, great licorice, slightly tannic, chocolate, mon chery. With water, the alcohol is greatly dampened and the flavors are confirmed

      long, chocolate, licorice

    Okay, yes, it's a "spirit", so not valuable with the same meter of a whisky, even a young one. Of course bold and strong, but less sharp than expected.
    With a few drops of water it starts displaying some kind of interesting texture, clearly enhanced by the sherry casks.
    Not ready yet, but for sure promising.

    Aroma: sweet sherry. Cherry. Malt. Slightly sweet salty smoke.
    Taste: Spicy. Let peat. Sweet. Sugar.
    Aftertaste: meaty peat. Sweet. Let vanilla. Salt
    Very oily.

    This spirit is so, so good already....
    Tasted much more mature than expected.
    Full off flavour, mouth warming with a beautiful color.

      Werthers real, turpentine, pecan nuts, lychee, cherry, butter croissant, bark, raisins, dates and cognac.

      Fisherman's friend, menthol, lime, cognac, orange and milk chocolate.

      Cheeky, full, greasy, woody and sweet.

    Nose: Sweet and concentrated on the entry – the sherry is very pronounced here: lots of dried fruit, with the ‘regular’ suspects such as sultanas galore, dates, fig, and the occasional prune.. There’s also a youthful feeling to it, with some new-makish notes, which are well ‘hidden’ under the many layers of sweetness and fruit. While the sherry is strong with this one, there’s also a nice toffee’d / caramel notes coming, maybe a hint of salty caramel as well. A musty feeling too, with mushrooms and burnt toast, as well as some wee smoke of a sweet kind.

    Palate: Mmmm. nice stuff, with a nice alcohol bite, which requires some water to tame it down. It’s sweet and filled with sherry notes, just as the nose suggested, with more maple and golden syrup, some orchard fruit maybe, some wood char, and again a wee smoky edge, but not a lot of that, more of a smoky brewed tea, and a peppery tang getting dry.

    Finish : drying, oak, vanilla, charred wood and coal, dusty and a bit sooty with the sweet sherry tannins going a long way.
    Very nice stuff for such a young ‘un.

    Conclusion : I was not expecting much (not sure why, maybe I have had too many young spirits which were not mature enough costing too much – you can’t blame me) , but this one’s really nice for what it is. It’s not even 3 years of age, aging in the cold weather of Scotland, and it feels ready. I know there’s a lot of Octave casks games going on, purposely used to hasten the maturation process, and that has worked nicely, all in all. The sherry is also doing a nice job at ‘concealing’ the real tender age of this liquid, and although it’s not the most ‘complex’ of drams, it does have a lovely nose, and a good balance of sweet, malty, smoky and sherried notes. I am very much looking fwd to tasting the liquid aging in proper big casks in the coming years, I have a feeling we’re going to see some very good whisky coming out of this wee distillery. Good work Adelphi. very good work.

    Strong alcohol in the nose, herbs and grains, dry int the mouth but beautifully sweet and mature. Hints of peach and vanilla. Great product, great young distillery with a lot of potential (but rather expensive drink, retail price in Belgium is 81EUR/bottle).

      Strong alcohol in the nose, herbs and grains. Almost something meaty. Hint of almonds and mushrooms. And at the end there is something framboise-like.

      Dry in the mouth, sweet and strong (alcohol strong) but it is gentle. Unbelievable that this is a spirit and not even a full body whiskey (2.75Y old and not 3Y). The taste is beautiful, it evolves and generates something peach-like.

      Peach and hint of vanilla in the aftertaste, cigars come in and then we get a darker palet of dust, leather and even some bitter tones.

    So far I have been able to gain something from all four releases, whereby I liked 2016 & 2019 the best.
    In 2019 I had a blind tasting and out of 16 participants no one came up with the idea that it could "only" be Spirit.
    A strong somewhat rough taste .... if it came from the promised island of Islay, it would be a different story for many ;-)

    Of course, one notices to the colleague with the tongue-twisting name his age. No question. However, I find the basic character interesting. Let's see how it develops with maturity.

      Nose:
      Begins for me very minerally. Lime, sand, pebbles. In the background is something maritime, slightly salty. Unripe grapes, sour cherries and something light-fruited. Has something of fermented mango. Add a decent load of dry grain and some leaves. Adhesive and a musty touch. The young age of course stands out. Has some of benzine.

      Sharp start. Neat alcohol and chili sharpness. Then comes a subtle sweetness. Redcurrants and dry wood. Wet cardboard box and again this musty note. Like when you take a breath in a damp basement. Mirabelle brandy and some bitter almonds. The second sip makes him look even younger. However, now comes the mineral and slightly maritime better. I also have a hint of smoke in my mouth. An acidic citrus note gets neat.

      Medium. Again, the slightly stormy alcohol and the chili. Sweetish vanilla. At the very end, there remains a bitter, flowery taste.

      Initially a pleasant sherry nose, but after a few moments it breaks apart and leaves only grain and silo behind. The barrel flavors are not enough to cover the New Make. With water a little more mature and maritime.

      The best of it all. Goes fast but with a pleasant aroma combination. Unfortunately, it stuns the taste buds a little too much.

    Deep copper gold with amber lights with good beading.
