"A surprisingly intense aroma of aged sauternes, honey and hessian greeted us first. Lots of custard, vanilla slice, jasmine, incense, creosote and aged madeira. Further notes of beeswax, coconut cream, chamois leather and sultanas stewed in cognac. Water developed things more towards dried fruits, tobacco leaf, elderflower cordial, mint leaf, old cigar boxes and lapsang souchong. The palate opens with nippy tannins, toasted fennel seeds, black pepper, olive oil cake, rose water, passion flower, cherryade and bitter chocolate. With water we found black tea, pomegranate molasses, orange vitamin pills, red cola. Goats cheese rind and Percy pigs. Matured for 10 years in a bourbon hogshead before transfer to a second fill heavily toasted hogshead."
