    An absolute beauty, this Highland Park was a great example of the distillery at its best. I loved the crispness of the flavor profile as this embodied the citrus-maritime essence of a sunset margarita enjoyed by the shore. It was loaded with impressions of freshly lit seaside grills, the warm smell of sun-baked sand, and wisps of burning incense from an open temple courtyard. The aroma brought back specific and sweet memories of days long gone by.
    • Nose
      Citrus, sea, and faint herbs. Clean and crisp notes of lemon curd and lemon meringue enjoyed by the sea. Early sunset stroll by the shoreside; sweet, mineral, and salt-laden air as the last rays of the sun warm the rocks and evaporate the tide pools. A subtle background smoke became stronger, charred wood and grilled mussels, which brought to mind a maritime promenade of restaurants and cafes just opening up.
    • Taste
      Medium-bodied with bright, crisp citrus, salt, and subtle smoke. Hints of acrid coal smoke and ash hung behind waves of sweet, salty citrus. Lemon, pomelo, and bitter orange came to mind as the citrus lingered across the palate with subtle herbal notes of tarragon and thyme. Toward the end were subtle reminders of burned incense and, when reduced, teakwood smoke with hints of white pepper and cinnamon.

    Distinctly oak influenced Highland Park on the first run. Water brings out more of the sweet notes and tames the oak.

    Simply great. Naked, unadulterated, no cask shenanigans. ‘99 ex-bourbon Highland Park is some of the best bang for your buck whisky around IMO.⁣
    • Nose
      Pure, clean nose, somewhat austere. Seawater, wet pebbles, medicinal balms, lemon and lime juice, honey drizzled melons, olives, capers, grilled white fish, sourdough bread, faint cigarette smoke.⁣
    • Taste
      Buttery sweetness initially with lemons, olive oil, brine, medical ointments, honey, sootiness, slightly smoky, capers in brine, mussels in white wine.⁣
    • Finish
      Long, lemony, oily, peppery, slightly smoky, salty.⁣

    This cask bottling, distilled in November 1999 at an undisclosed Orkney distillery, spent eighteen years maturing in a 2nd fill bourbon barrel. It was bottled at cask strength in May 2018 at 54.8% ABV. Cask #453 yielded 186 bottles for retail sale.

    Color: White tea

    Nose: Pleasing light peat to open followed by a slight medicinal note, linen closets, honey drizzled over fresh cantaloupe, roasted hazelnuts, and lit tinder sticks

    Palate: Floral smoke with hints of grass and cereal with a building vegetal quality, dried mangoes and melons, cask char mid palate, beach stones, pleasantly salty

    Finish: White chocolate, sea salt, ground grey pepper

    On the label: A perfect balance between lightly peated malt and a rich melon-like fruitiness. Quite different from the distillery’s offering of the same age. The ex-bourbon maturation allows a different side of the distillery’s house style to shine through.
