      Directly beautiful smoke, pleasantly maritime and slightly dry, strawy. Great distillery character
    • Taste
      full and wide, herbal aromas, meadow and ingenious peat notes
    • Finish
      long and smoky, beautiful wood notes

    Nose: creamy, dirty, herbal, ashy-smoky, shoe polish, rubber, fishing net, fish oil; after 15 minutes it becomes fruity; Honeydew melon, raspberry; I also feel some spiciness, which I would describe as sweet cinnamon; Grapefruit, bitter notes; after an hour in the glass, I have something pasty-grassy-limey, no more smoke.

    Mouth: iodine, herbal peat, ashy. One day old, slightly dried lemon pieces. Somewhat astringent and bitter.

    Finish: ashy, very dry, a woody feel, a strong ashiness remains for a long time.

    In terms of sherry technology, I am most likely to have a Fino association, but I probably wouldn't have come up with sherry at all.

    After 24 hours:
    Nose: more settled, more aromatic, still on the fishy-seay aroma wave, I now perceive sherry a little more clearly, harmonizes beautifully with the other two components. Rancid fish oil. Sparkling fruitiness.

    Mouth: peat, nice tart acidity.

    Finish: tart, herbaceous, sherry; the cold ashes remain.

    Perfectly salty, peaty and wilderness curbed by very classy, influential yet not hyperactive sherry cask.
