First off its sweet, honeyed, barley sugar, fresh fruit, green apple, peach. At some point it switches around and turns minty and mineralic, almost flinty. And then the oloroso shows up with the darker fruits. Quite a chameleon nose and worthwhile exploring at length.
With water the nose freshens up further and shows citric characteristics, like stewed lemons coated in honey.
Sweet and sour and powerfully so. Honey, barley, peach, turning to over strawberry to plum, nuts, then beach pebbles and licking a seashell. Sherry is in there with the oak but both are fairly subdued.
With water: Again the lemon shows up, and again its sweetened.
Medium long on some dry honey, barley and then fading into the elemental mineralic side.
