    very good sherry barrel (no dark sherry)
    actually not a particularly exciting dram, rather great because the distillate still shines through, typical Deanston sweetness, cereals and toasted notes are still recognizable - I like it.

    Blindly recognizing Deanston in 1997 as a sherry barrel ripening? No way! Somehow I had only believed in a wine barrel finish, with previous storage in bourbon barrels. So rather fruity, with a fermented note. But lo and behold: “Palo cortado in English: broken stick, is a traditional style of sherry that produces excellent and rare sherries. Palo cortado usually arises by chance during sherry production, when a fino unintentionally develops towards Oloroso during expansion. The yeast is precipitated and the wine is subjected to a stronger oxidation. This creates a sherry that tastes like an intermediate product between Amontillado and Oloroso. Its complex aroma is often reminiscent of nuts or almonds. Palo cortado is mostly grown dry with an alcohol content between 18 and 22% vol. “, Says Wikipedia. I would not have recognized it.

    Great part, but better than the 20-year-old?

      First sour with fermented berries. From the nose, I would have smelled a wine finish the first time I smelled it. In the second round there is a nice sherry nose with chestnuts, leather, tobacco associations and coffee. Hammer like that changes and unfolds with time and air.

      The mouth fills up creamy and full. Again leather and tobacco, with a fine malty sweetness. The start brings a massive spicy oak barrel, the alcohol provides the necessary power

      Long-lasting and creamy. The finish also benefits from breathing time and air. Really great part!

    21 years old, Palo Cortado Finish, 51.8%
    Nose: a really fine sherry nose, drier than classic Oloroso, neither applied nor constructed, behind it roasted aromas, coffee grounds, cocoa beans, roasted malt, the creaminess typical of Deanston for me
    Flavor: a potpourri of berries and boiled sour cherries in distilled form, that does not make 10 YO wet barrel plums, alcohol is well integrated
    Finish: medium length, the roasted aromas dominate here again
    Conclusion: A really very good malt, but unfortunately no longer in an affordable price range. Like more of such finishes

    To start with, a very independent malt. In every situation, I always had the memory that it is the texture and aromas that you would expect from a semi-dry wine. The way it is made also gives the impression of being a little single track. But it is not if you bring time with you. I am very happy about the opportunity to test with a large sample. Thanks dear André.

      Right on the nose it is clear where it is going. Due to the fact that Palo Cortado arises rather accidentally, this special nose probably arises. There is a deep sherry but no dirty tone. So light leather coated with wax. He is also more on the acid side. Only an artificially fine sweetness arises, which is quickly lost in the special wine notes. Semi-dry. Very exciting and finally something else. Hopefully he will hold out.

      I got in with plenty of water and that was a good thing. The honest transition from the nose is repeated. More sour and sweet on the palate too. It was just not an oloroso and you can feel it tremendously now. But those who can appreciate that will be happy. This is exactly what makes it so special. Sherry's experiment was a success. Praise to Deanston. The spirit also reports and everything feels full and round. Again and again the memory of semi-dry wines ... also in the transition ... great. A painting you don't forget.

      Medium to long with the usual nouns from the sherry area and not on the musty side but lacquer and leather remain the biggest impression in the transition. It sounds full, fat, soft. An extremely pleasant finish with a red-wine acidic finish. Particularly noteworthy is that he persevered until the end. My full respect. Praise finished :)

    Orange marmalade and cranberry jelly. Unique and complex nose, tart and dark sherry notes on the palate, bittersweet finish. Very much in its own category,but not as good as I had hoped. On the verge of being great but not quite getting there, balanced well with a nice long finish.

    No dark sherynotes. Sweetish-malty, subtle roasted aromas. Reminiscent of crumble cake. Barrel has not overlaid the malt. Malt wins with the addition of water. Not quite my style. Deanston's friends, who are looking for a round sherry malt reflecting the distillery's character, should access here.
