Distillery Projects 006 all comes from Fino cask number 104, filled in September 2016 and bottled in June 2019, and is 100% column distilled spirit. It’s a sherry butt with a 500L capacity (one of our largest casks giving us a yield of 1142 x 50cl bottles) and it’s a ‘first fill’ cask, which means that our spirit is the first to fill it since the original sherry was disgorged. We only filled three of these Fino casks in 2016 so, because it’s also filled with column-only spirit, it’s really unusual and, we think, unlike anything else available in the market.
Why Fino? Fino sherry is a dry, light, delicate style of sherry meaning that it really allows the distillery character and the subtle characteristics of our column spirit to shine through, creating a different flavour profile to other types of ‘heavier’ sherry styles, like Oloroso or Pedro Ximenez. It’s a less common cask used in whisky maturation and, when it is, it’s mostly used for ‘finishing’ rather than fully maturing as we’ve done here.
Tasting notes: Light, fragrant and spicy, with notes of grapefruit, fudge, baked apple, ginger biscuits, pineapple, coconut and black pepper.
