- Juicy, fun and lively, with a very successful finish that keeps you coming back for more. That being said, it's far from perfect, and at times, you can really see the seams of how this was stitched together.
A big caramel hit up front. Chocolate-covered fudge and saltwater taffy. A bit of unripe banana and a slice of sweet red apple. There's also a grassy aspect, as well as a hard-to-pin-down tart / astringent element that becomes more prominent with water. The alcohol comes through somewhat, but it's not too bad, considering the strength. All in all, very pleasant and inviting, very lively and fresh, and thoroughly un-boring. I hope the salinity continues to play a role on the palate.
Ah yes. I can see why they saw fit to finish this cask in ex-sherry wood for quite some time. It's still pretty raw and aggressive after 21 years, with the tart and acidic aspects taking the lead. The Inchgower salt is there, however, and even if the sherry finish has imbued the liquid with a slight sense of rubber, it's more than bearable, since it has also smoothed things out somewhat and added lovely nutty and fruity characteristics. Takes water well, but also needs quite a bit of it.
Nutty, caramelly, juicy. Gone rather swiftly, but the afterglow is so mouthwatering that it's urging you to take another sip.
