Very complex and expressive. Blueberries and blackberries form the fruity side. A fine bouillon will make it flavourful. And flint dust or something like that gives a minerality.
I am spontaneously reminded of port cask maturation. This tastes like dissolved cassis candies. Then comes blood orange, some spices, ginger, pepper and a nice acidity. The broth now became aspic or jelly.
Wonderful bitter notes in various forms: from ground seeds to ground coffee and cocoa. In addition again fruits and this time boiled beef.
