    Very interesting dram overall with its specific smokiness and earthiness. Excellent for a cold autumnal evening.

      Quite clearly speck on the nose indeed! Yet some sea breeze and its saltiness and a black truffle earthiness. Water brings out the toffee notes at the end with some citrus character
    • Taste

      In the mouth strong earthy feel, very smoky, sweet, and creamy, leaving an excellent vegetal bonfire taste - fresh logs. Water smooth out the smoke towards dried leaves, emphasises the creaminess and mellows out the fire smell. Reveals some spiciness - cinnamon, and unravels the citrus
    • Finish

      A smooth finish yet going away fast, ending on the oak. With water, some caramel stands out and gets to make the finish last longer.

    Lovely dram, warming.

    Color: Sauternes
    • Nose
      85 85
      Neat, the nose is not too peppery despite the abv, and reveals peat, obviously, as well as citrus, apple, and pear. There's also a kind of grassy aspect to it, as well as hints of fresh paint.
      With water, the nose gets a little more pepperish, and speck becomes clearly present
    • Taste

      The palate, neat, is sweet at first, then slowly becomes pepperish as the alcohol kicks in. The texture is oily, warming and very slightly dry. Citrus is present as well as butterscotch and campfire smoke. There is also a noticeable meaty aspect to it, with smoked meat, hence the name.
      With water, it becomes meatier and spicier, with stronger lemon. Texture becomes also creamier.

      Neat, the finish is medium, slightly spicy and meaty, smoky, with a warming feeling on the gums. With water, it becomes dryer and spicier, with a light bitterness

    SMWS Tasting Notes: A sweet, earthy aroma of a steaming, freshly brewed redbush cup of tea was followed by seared vanilla honey cured salmon. On the palate neat absolutely delicious just like a crisp Tyrolean Panini with truffle and speck (distinctive dry-cured, smoked, juniper-flavoured ham only produced in South Tirol). When we added water it turned into a bowl of Cantonese style steamed mussels with a ginger oyster sauce on the nose, whilst the taste became a sweet, smoky, sooty, fruity rumtopf. After six years in an ex-bourbon hogshead we transferred this whisky into a second-fill hogshead with a heavy toast and a medium char.
