"With a juicy and rounded introduction it was all too easy to become embroiled in blackberries, raspberries and cherries. Fresh oranges incorporated sweet spice, turning to mulled wine and fruit chutney. A delightfully yeasty note brought fresh bread crusted with dried herbs and served with a glass of fino sherry. Fruit returned on the palate with blackcurrants and grape juice that thickened to rich marmalade with pickled ginger. Dark chocolate encircled black cherries and strawberry tarts, with the zing of sour cherries and a hint of sage that turned into peppermint on the finish. After spending 13 years in an ex-bourbon hogshead this was transferred to a charred red wine barrique for the remainder of its maturation."
