C: Cotswolds distillery isn’t stuck on Jim Swan’s STR legacy. It’s experimenting with everything. This Lord Mayor’s release is a prime example: INFO.

    information of the distillery:

We began making this unique release the same way as our flagship single malt. High and narrow spirit cuts, following on from a long fermentation using two yeast varieties, are responsible for the high ester count in our new-make spirit, resulting in a creamy and fruity flavour.

We then matured the new-make spirit at 63.5% ABV in the Lord Mayor’s ex-Bourbon casks and shaved, toasted and recharred American Oak red wine barriques. During this time we also filled a 500L ex-Pedro Ximenez Sherry butt with our new-make spirit, which was left to age for 3.5 years. These three casks were blended in roughly equal measures and then re-casked for an additional month. The addition of the sherry cask has added a different layer of spice and fruit to our flagship single malt. This truly special bottling has been diluted to 46%, non-chill filtered and without any additional colouring.

Malt: Odyssey, grown on Cotswolds farms and floor-malted at Warminster Maltings.

Yeast: Two complementary varieties - Anchor and Fermentis - to ensure good yields and excellent fruity flavours.

Water: Village water supply - filtered, softened and demineralised before use.

Wood: A blend of premium first-fill ex-Bourbon barrels and shaved, toasted and recharred American Oak red wine casks from the Lord Mayor's private reserve, married with a single ex-Pedro Ximenez Sherry butt.

Nose: Cooked apple, caramel, a hint of wood char and digestive biscuit.

Palate: Seville orange, warming cinnamon notes, hazelnut and barley sugar.

Finish: Dry and nutty, with lingering oak spice.

Please note these bottles are unnumbered
