    What is a special occasion? A round birthday? Wedding day? Being alive after 4 weeks with COVID-19 definitely ticks all the boxes, so let's pop the cork of Springbank 25! Matured in a combination of sherry and rum casks, the nose features tropical fruits, sugar cane molasses and fresh herbs, sage and thyme in particular. Complex wood spices, dark chocolate and quality rum notes dominate the palate, followed by pineapple, orange zest and whiffs of smoke. The finish is long and herbal with a salty edge. A great dram for sure, but not as great as I thought.

    Thanks to Slàinte Mhath for sharing this sample.
    No doubt, you can taste the quality and age in this one.
    And within that lies my problem.
    What really attracts me about Springbank is the raw and dirty elements you find in the young and strong ones.
    Farm yard, stable, burnt electronics and bakelite. or for those that prefer the full chemical name of this pioneer plastic: polyoxybenzylmethylenglycolanhydride... phew!
    But just like Islay whiskies, these unique distillery features seems to fade as the whisky ages.
    This is not rough or dirty in any way. It's round, elegant and refined.

      The rum cask influence is noticeable on the nose.
      Rum cask can be a hit and miss, this one works.
      Sweet brown dark sugar.
      Still the sherry shines with plenty of dark fruits.
      Not too complex, but the wood notes reveals it is of some age.
      As I understand the mix of sherry and rum casks are not the standard delivery of Springbank 25, and I can not make any comparison as I have not tasted the pure sherry.

      The rum casks add a different kind of sweetness to the sherry fruit. More herbal.
      The alc is quite noticeable and spicy for 46%
      Moves into dark chocolate with what I perceive as a slight apple acidity.

      The wood spice keep the finish long and warming.
      A pinch of salt at the end.

    More depth than the 21 OB 2019 release, I think this is slightly better.

      Malty, very herbal, very smoky and peaty, maritime and mineral, rosemary, herb spices, kind of funky here.
    • Taste
      More funky, boiled green beans, some raw vegetable extracts, gin spices, smoky, sweet pineapple, orange candy, sour, rich and powerful.
    • Finish
      Medium, sweet and creamy oak, tropical chocolates.

    Tasting Notes by Springbank:

    Nose: Initially parma violets and rhubarb. Barbecued meats and sugar cane molasses follow alongside tropical fruits and oloroso sherry notes.

    Palate: Maturity and complexity at its best. A perfect balance of sherry and rum casks married in harmony. As it breathes; cured meat notes with a presence of tropical fruits and muscat wine.

    Finish: Oh, yes, it’s definitely a true Springbank with coastal and earthy/musty dunnage warehouse notes, with sugary molasses in the finish.
